Turkey Squash Casserole
INGREDIENTS:
1 pound ground turkey
1 tablespoon vegetable oil
2 cups sliced yellow summer
squash
1 medium onion, chopped
2 eggs
1 cup evaporated milk 1 cup shredded mozzarella
cheese
6 tablespoons butter or
margarine, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup crushed saltines
DIRECTIONS:
1. In a large skillet, cook turkey in oil over medium heat until no longer pink. Add the squash and onion. Cook until vegetables are crisp-tender; drain.
2. In a bowl, combine eggs, milk, cheese, butter, salt and pepper. Stir into the turkey mixture. Transfer to a greased 8-in. square baking dish. Sprinkle with the cracker crumbs. Bake, uncovered, at 375 degrees F for 35-40 minutes or until heated through.
Asian Roll Lettuce Wrap
INGREDIENTS:
1 pound ground turkey
1 tablespoon light soy sauce
1 teaspoon minced garlic
2 teaspoons minced fresh
ginger root
1 cup brown rice
1 cup water
16 large lettuce leaves
1 cup shredded carrots
1 cup green onions, thinly
sliced 1 cup sliced red bell pepper
1 cup sliced radishes
1/3 cup light soy sauce
1/3 cup water
3 tablespoons fresh lemon
juice
2 teaspoons minced garlic
1 tablespoon minced fresh
ginger root
1 teaspoon sugar
DIRECTIONS:
1. In a medium bowl, mix together ground turkey, 1 tablespoon soy sauce, 1 teaspoon minced garlic and 2 teaspoons ginger. Form into 16 meatballs and roll into ovals. Cover and refrigerate.
2. In a medium saucepan over medium heat, combine rice with 2 cups water. Bring to a boil, reduce heat and simmer for 20 minutes, or until rice is tender.
3. Preheat the grill or broiler. Arrange rice, lettuce leaves, carrots, scallions, radishes and red peppers onto a serving platter or place each into a small bowl. In a medium bowl, mix together 1/3 cup soy sauce, 1/3 cup water, lemon juice, 2 teaspoons garlic, 1 tablespoon ginger, and sugar. Divide into 4 small dipping bowls.
4. Thread two meatballs onto each 10 inch skewer. Grill or broil for 10 to 12 minutes, turning occasionally to brown all sides. If broiling, line the broiler pan with aluminum foil and drain fat after 6 minutes.
5. To eat, place a leaf of lettuce onto the palm of your hand, spoon on a little rice, then a meat roll, and a few of the vegetables. Roll up and dip in dipping sauce or spoon sauce over.
Stuffed Peppers with Turkey and Vegetables
INGREDIENTS:
4 green bell peppers, tops
removed, seeded
1 pound ground turkey
2 tablespoons olive oil
1/2 onion, chopped
1 cup sliced mushrooms
1 zucchini, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 cup fresh spinach
1 (14.5 ounce) can diced
tomatoes, drained
1 tablespoon tomato paste
Italian seasoning to taste
garlic powder to taste
salt and pepper to taste
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.
3. In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.
4. Return peppers to the oven, and continue cooking 15 minutes.
Enchilada Stuffed Shells
INGREDIENTS:
15 uncooked jumbo pasta
shells
1 pound lean ground turkey
1 (10 ounce) can enchilada
sauce
1/2 teaspoon dried minced
onion 1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 cup fat-free refried beans
1 cup shredded reduced-fat
Cheddar cheese
DIRECTIONS:
1. Cook pasta according to package directions; drain. In a nonstick skillet, cook turkey over medium heat until no longer pink; drain. Stir in enchilada sauce and seasonings; set aside.
2. Place a rounded teaspoonful of refried beans in each pasta shell, then fill with turkey mixture. Place in an 11-in. x 7-in. x 2-in. baking dish coated with nonstick cooking spray.
3. Cover and bake at 350 degrees F for 25 minutes. Uncover; sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

Ground Turkey Meatball Recipe
Ingredients
1 pound ground turkey
1 egg
2 cloves of garlic finely chopped
2 tablespoons finely chopped parsley
1/3 cup onion finely chopped
陆 cup plain breadcrumbs
1 8 ounce can of diced tomatoes (drain off some of excess juice)
1 4 ounce can of tomato sauce
1 teaspoon Italian seasoning
4 tablespoons grated parmesan cheese
Bread of choice or noodles (rolls or other hard buns are great for this recipe)
In a large bowl mix together turkey, egg, breadcrumbs, parsley, and garlic. Allow to rest in refrigerator for one hour. This helps the flavor distribute throughout the meat. Form meatballs just smaller than a ping pong ball. Using a nonstick pan, brown meatballs and remove from pan. Add onion and cook until they become translucent. Stir in the remaining ingredients and add back meatballs simmering for 20 minutes. Serve meatballs with sauce on bread or noodles. Sprinkle with parmesan cheese.

GROUND TURKEY CHILI RECIPE
Ingredients:
vegetable oil, about 2 tablespoons
2 pounds lean ground turkey or half lean ground beef and half lean ground turkey
1 large green bell pepper, chopped
1 cup chopped onion
1/4 teaspoon garlic powder
salt and pepper to taste
1 large can (28 ounces) tomatoes in puree
1 1/2 cups tomato sauce
1 or 2 cans (15 ounces each) kidney beans, drained and rinsed
1/4 cup of beer or broth
2 to 4 tablespoons of honey or brown sugar, or to taste
2 envelopes commercial chili mix (for 2 pounds meat)
dash of cayenne pepper, to taste
shredded Monterey Jack cheese, or mild Cheddar cheese
Preparation:
Heat oil in a large kettle or Dutch oven. Brown ground turkey. Add remaining ingredients and simmer for 1 1/2 hours or more. Can also be cooked in the crock pot, after the ground turkey has been browned. Top with grated cheese (Mozzarella, cheddar, or Monterrey Jack), sour cream, oyster crackers, chopped onions, taco chips, etc.
