Another thing you can do is make a turkey soup, like chicken soup, with vegetables and once it's done put it over rice or pasta.Recipes for that left-over christmas turkey?
Next Day Turkey Pot Pie





1 medium onion


1 C. carrots


1 C. celery


1 T. vegetable oil


9 oz. frozen chopped spinach


3 C. cooked turkey


1/2 C. country or baked ham


10 3/4 oz. canned cream of chicken soup


2 1/2 C. milk, divided


1/4 t. black pepper


1 1/2 C. self-rising flour


1/4 C. Parmesan cheese


1/2 C. butter or margarine





Heat oven to 400掳 F. Grease shallow 3-quart baking dish.





In large skillet, cook chopped onion, thinly sliced carrots and thinly sliced celery in vegetable oil until tender. Stir in spinach (thawed and drained); pour into baking dish. Add shredded or chopped turkey and chopped ham; distribute evenly in baking dish.





In medium bowl, combine undiluted soup, 1 cup milk and freshly ground pepper; pour over turkey mixture. In medium bowl, combine remaining milk, flour, grated cheese and melted butter or margarine; stir until smooth. Pour over ingredients in baking dish.





Bake 45-50 minutes or until golden brown.





Makes 6-8 servings.











Turkey n' Stuffing Pie





1 egg, beaten


1 cup chicken broth


1/3 cup butter, melted


5 cups herb-seasoned stuffing cubes





FILLING:


1 can mushroom stems and pieces, drained


1/2 cup chopped onion


1 tablespoon butter


1 tablespoon flour


3 cups cubed cooked turkey


1 cup frozen peas


1 tablespoon minced fresh parsley


1 teaspoon Worcestershire sauce


1/2 teaspoon dried thyme


1 jar turkey gravy


5 slices American cheese, cut into strips





In large bowl, combine egg, broth and butter. Add stuffing and mix well. Pat onto bottom and up sides of greased 9'; pie plate; set aside.





In skillet, saute mushroom and onion in butter until tender. Sprinkle with flour and mix well. Add the turkey, peas, parsley, Worcestershire and thyme; mix well. Stir in gravy. Bring to a boil, then boil and stir for 2 minutes.





Spoon into the crust and bake at 375潞F for 20 minutes. Arrange cheese strips in lattice pattern over filling. Bake 5-10 minutes longer or until cheese is melted.





Yield: 4-6 servings.

Brush slices of Italian bread with olive oil. Top with minced garlic and toast in the oven. Spoon on a combination of turkey, shredded mozzarella cheese and chopped fresh basil. Broil until cheese melts








Hot And Spicy Turkey Chili





Combine saut茅ed green pepper and onion with turkey, canned tomatoes, canned red kidney beans and a touch of crushed red pepper. Top with corn chips.








Turkey Grape Salad





Combine turkey with halved green grapes, toasted sliced almonds, sliced green onions, orange zest and light mayonnaise.








Turkey Stir Fry





Stir turkey into stir-fried broccoli florets and red bell pepper strips. Add minced garlic, fresh ginger, soy sauce and a sprinkle of sesame oil.








Turkey And Spinach Tetrazzini





Combine turkey with cooked spaghetti, chopped sun dried tomatoes, a thawed package of frozen creamed spinach, minced garlic, and Parmesan cheese. Bake until heated through








Breaded Turkey Italian Style





Dip turkey slices in beaten egg, coat with fine bread crumbs and brown in melted butter.





Transfer to baking dish and top with spaghetti sauce, shredded mozzarella cheese, chopped mushrooms and green pepper. Bake until cheese melts.

Turkey barley soup or turkey vegetable soup. Put the carcass of the turkey in a large pot, cover with water or broth. Using broth or a mixture of broth %26amp; water adds flavor! Add some sliced onion %26amp; a couple stalks of celery to add flavor to your stock (remove with carcass). Bring to a boil, turn heat down to simmer for a couple of hours, until meat falls off the bone. Use a colander to strain the broth from the carcass. Let carcass cool enough to handle. Pull meat from bones and add back to soup.





Add cut up veggies - potatoes, carrots, green beans, diced celery and/or whatever veggies you like. If you want to add rice or barley, cook rice/barley before adding to the soup (it takes up too much liquid), then add to soup. Season to taste.





Great with left over rolls!
My great-grandma always made BBQ with the leftover turkey. Shredded it up in a skillet, pour on some BBQ sauce, and basically heat it up. I like mine with toasted bread, its really good!
Cut it up in slices and make it in some fettuccini alfredo sauce with spaghetti or





sherreded it up and add some cut up union lemon and complete seasoning and place in frying pan and that taste awesome too.

Quick and Easy Leftover Turkey Casserole





Spray a 13x9 pan with cooking spray. Place 1 1/2 to 2 cups leftover turkey (or chicken) pieces in the bottom. Mix 1 can cream of mushroom soup (or cream of chicken), 1 can cream of celery soup, and 1 cup of milk in a bowl. When mixed, spread soup mixture over the turkey. Take a box-mix of stuffing and sprinkle dry pieces over the soup mixture evenly. Place in an oven at 350 for 30-40 minutes until it's bubbly and beginning to brown.





Hint: I don't use the stuffing seasoning packet in this or it makes it too salty, I save it as a seasoning for homemade chicken noodle soup later.
