This is what I've always used and my turkeys turn out so succulent and moist.
It all depends on how large of a bird you are going to be using as far as cooking time is concerned. Look at the outside label of the turkey wrapper.
Make sure you clean the giblet bag out of the inside of the turkey. Thaw it out well because turkeys are frozen solid and take a few days.
Wash the outside with cool water once it has thawed out. Next dry it off with a clean cloth. Take a stick of butter or margarine and rub the turkey's skin with it.
Take rosemary and thyme and rub that into the skin as well. If you are using fresh herbs then stuff the inside of the bird's cavity with it. Slice a few lemons and stick them into the inside of the turkey. Citrus and poultry work well with one another because it infuses it with a tiny amount of flavor and makes the meat so moist (turkey meat can be dry!)
Sprinkle the skin with a few dashes of salt and pepper as well. I also at this point like to add just the tiniest bit of all purpose flour to the outside of the turkey. When the juices are cooked out of the turkey they run into the bottom of the roasting pan along with the flour and the butter, herbs and this makes an excellent gravy!
Bake and make sure to baste the meat every so often. When the turkey is finished cooking remove it from the pan onto a serving plate. Wait a while before slicing it so the juice of the turkey stays in the meat.
If you want to make giblet gravy, save the giblet bag and slice up the giblets and fry them. Use the drippings from the roasting pan and add that to the giblets as well as some milk, water, flour, salt and pepper, and some finely chopped onion and mushrooms.
