My husband and I had sooo much leftover turkey this year. We really had fun finding different ways to use up all that meat.
Anyone have any good recipes? Nothing with weird ingredients that I'd have to go to a special store to buy them ... and not anything to obvious, like turkey sandwiches, pot pies ect...
Thanks!!Favorite unique leftover turkey recipe?
Wow I am very sorry for that other answer. Very tasteless.
I have a lot of recipes here's some of my favorites.
TORTILLA TURKEY STACKS
2 7-inch flour tortillas
3/4 cup chopped cooked turkey or chicken
1 tablespoon bottled fat-free Thousand Island salad dressing
1 TB bottled chunky salsa
1-1/2 ts thinly sliced green onion
1/2 C canned vegetarian refried beans
1-1/2 C shredded lettuce
1/2 of a medium tomato, chopped
1/4 C shredded reduced-fat Monterey Jack cheese or reduced-fat Colby and Monterey Jack cheese
1. Place tortillas in a single layer on a baking sheet. Bake in a 350 degree F oven for 10 to 12 minutes or until crisp and light brown. (If tortillas puff during baking, pierce with a fork to allow steam to escape.)
2. Meanwhile, in a medium bowl combine turkey, salad dressing, salsa, and green onion. Set aside.
3. To assemble, spread about 1/4 cup of the refried beans over each tortilla. Top with turkey mixture, lettuce, tomato, and cheese. Makes 2 servings.
*I think this would be good with some sour cream %26amp; I used black olives this year. Was a hit!!

Cream of mushroom soup do not dilute. Add grated cheese about 2 ounces--sharp cheddar and/or colby are good in this--heat over low heat and stir until cheese is melted. Add chili powder to give it a nice kick and if you like spicy add a hot pepper or some ground Cheyenne pepper. Mix with the turkey. Now is the fun part. You can put this over mashed potatoes, over rice, over pasta or stuff it in a burrito with beans and rice. Very versatile and yummy. Have fun.
Next year, buy a smaller turkey, ha ha.
my dad makes turkey meatloaf sometimes, I guess that would be called turkeyloaf, I don't know the recipe but I'm sure you could just google, or yahoo, it.
