BAKED GROUND CHICKEN
1 1/2 lbs. ground chicken
1 can cream of chicken soup
1 egg, beaten
2 tbsp. chopped onion and bell pepper
2 tbsp. flour (1 tbsp. rolling patties)
3 tbsp. evaporated milk
Salt, pepper, garlic and onion powder to taste
Paprika (topping)
Mix ground chicken, onion, bell pepper with flour, egg, seasonings and evaporated milk. Pat and press mixture to form 6 patties. Roll in flour. Bake at 375 degrees for 30 minutes. Remove from oven, drain fat. Pour soup over patties, sprinkle with paprika. Return to oven and bake until bubbly.
GROUND CHICKEN CASSEROLE
6 med. potatoes, sliced
2 med. onions, sliced
1 1/2 to 2 lb. ground chicken (or other ground meat)
1 (10 and 1/2 oz.) can cream of chicken soup
1 (10 and 1/2 oz.) can cream of celery soup
2 c. water
Layer first set of ingredients in a baking dish. Cook 1 and 1/2 to 2 lbs. Ground chicken in large skillet until well browned and no trace of pink remains. Layer on top of onions. Mix together remaining ingredients. Spoon over casserole. Bake, covered, in 300 degree oven for 1 hour (or until potatoes are tender).
EASY GROUND CHICKEN LASAGNE
1 jar Prego sausage %26amp; green pepper spaghetti sauce
1 lb. ground chicken
16 oz. ricotta cheese
2 1/2 lb. mozzarella cheese
1 sm. can olives, sliced
Lasagna noodles (approx. 9)
Brown chicken then add spaghetti sauce. Heat. Boil lasagne noodles until tender. Begin by layering 9 x 13 inch pan with noodles. Spread ricotta on noodles, enough to cover. Then add some sauce, olives and mozzarella. Continue this layering beginning again with noodles until the pan is full (about 3 layers). Make sure the top has extra cheese. Bake at 350 degrees until cheese is melted and golden.
GROUND TURKEY ENCHILADAS
1 1/2 lbs ground turkey
1 pkg frozen spinach - thawed and drained
2 cups salsa
1 can diced tomatoes
1 pkg flour tortillas
2 cups Mexican blend cheese
1 8 oz. block cream cheese
ground cumin to taste
Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.
Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.
Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.
Serve with refried beans and mexican rice. Sour cream and guacamole are also great additions.
GROUND TURKEY CASSEROLE
1 lb. ground turkey
1 can tomatoes or tomato sauce
3 c. cooked macaroni
12 oz. shredded cheese
Salt %26amp; pepper to season
Approx. tbsp. chili powder
Cook macaroni as usual, drain and set aside. Brown the meat and stir in the tomatoes and seasoning to taste, stir in macaroni and simmer a few minutes, put in a 2 quart casserole dish adding about three fourths of the cheese and mix, bake in 350 degree oven for approximately 45 minutes then take out of oven and add the last of the cheese on top and return to oven for about 5 minutes. Serve hot or cooled it is a very tasty dish.
GROUND TURKEY VEGETABLE SOUP
2 lbs. ground turkey or chicken (even hamburger)
2 lg. onions, 1 diced, 1 sliced
2 lbs. washed carrots, unpeeled to keep vitamins intact
6 celery stalks with leaves
2 lg. cans tomatoes
1 lg. can tomato sauce
6 lg. potatoes, washed, but not peeled, cubed
1 qt. water
1 qt. beef stock (can be instant or reduce your own)
Salt and pepper to taste
Saute chopped onion, ground meat and celery. Strain off any extra fat. Return to stock pot. Add sliced onions, sliced carrots and diced potato. Add tomatoes and tomato sauce. Then add water and stock. Cook all ingredients over medium low heat for about 1 hour. Season to taste with salt and pepper.

3 tablespoons olive oil
1/3 cup flour, seasoned with salt and pepper
1 (3 1/2- or 4 1/4-pound) chicken, cut into 8 parts
2 large yellow onions, cut into large chunks
3 cloves garlic, finely chopped
1 cup chicken broth
Grated zest and 4 tablespoons fresh lemon juice from 2 lemons
1 (28-ounce) can of chopped tomatoes with juice
2 teaspoons fresh oregano, chopped
1/2 cup kalamata olives, pitted
Kosher salt and pepper to taste
1/2 cup feta cheese, crumbled
In a large Dutch oven over medium-high heat, add the olive oil. Dredge the chicken in the flour using a resealable plastic bag. Brown the chicken in the oil for about 5 minutes per side. Add the onions and continue to cook, stirring occasionally, until slightly soft, about 5 minutes. Add the garlic and cook for 30 seconds. Add the broth, lemon zest and juice, tomatoes and juice, and oregano. Bring to a boil, add the olives, reduce heat to low and cover. Allow to simmer on the stove for 45 to 50 minutes until the chicken is very tender. Adjust the seasoning with salt and pepper as desired. Serve in the pot or in a shallow bowl with the crumbled feta on top.Any one pot recipes for ground chicken or turkey?
I make sort of a chilli. Cook the meat then add some salsa, beans %26amp; corn. I put hot sauce in but I like hot stuff. You could add peppers too if you like. then I sprinkle some colby jack cheese %26amp; top with sour cream.
I also make what I call ';hash';
Cook the meat add in diced potatoes. When those are cooked (tender) I add some salsa %26amp; cheese. I serve this with eggs.
Anything you make with ground beef you could make with ground chicken or turkey. I had my boyfriend fooled for quite a while.
caesar burgers...
1 lb ground beef ( I tried chicken and liked it better)
1/4 c grated parmesean cheese, divided
2 minced garlic cloves
4 slices mozzarella cheese
lettuce
4 buns
6 tbsp caesar dressing
Preheat grill. mix 3 tbsp parmesan cheese and garlic with meat. Shape into 4 patties. Grill 6 minutes on each side or until done. Top with moz. cheese for 1 minute to melt.
Toss lettuce with 2 tbsp dressing and remaining parmesan cheese. Spoon onto buns. Add done burgers. top each burer with 1 Tbsp of caesar dressing. Serve and enjoy!
