Recipes w/ Ground Turkey?

I have a lb of ground turkey in my freezer that I need to use. I know that I can use it in place of hamburger in like, hamburger helper, and I can mix it w/ hamburger for meatloaf, but what else can I do w/ it? I'm looking for interesting recipes for a picky eater.Recipes w/ Ground Turkey?
Cheese And Meat Pie





1 lb ground beef or turkey


1 can condensed tomato soup


1 can green beans, cut


1 8-oz bag shredded cheddar cheese


1 8-oz bag mozzarella cheese


1 T chili powder


pie crust for 13 x 9 pan





Preheat oven 350


Brown and drain hamburger.


Prepare pie crust, set aside.


Combine hamburger, green beans, tomato soup


and chili powder.


Blend well


Add almost all cheeses


(reserve enough to top the 9x13 pan with)


and heat on top of stove in saucepan


until cheese is partially melted.


Pour into pan.


Top with remaining cheeses.


Bake until cheeses on top are melted.








Mo-Nique's Baked Beans Surprise





1 pound ground turkey


1/2 medium onion, chopped


1/2 green pepper, chopped


1 16-ounce can baked beans


1/4 cup maple-flavored syrup


1 tablespoons ketchup


1 tablespoon prepared yellow mustard


1/8 teaspoon ground cinnamon


1/8 teaspoon ground nutmeg


3 tablespoons light brown sugar


1 cup shredded cheese





Cook and stir ground turkey until browned.


All onions and green peppers, cook and stir until


vegetables are tender.


Drain ground turkey, onions and green peppers.


Mix together all ingredients listed until well combined in


casserole dish except 1/2 cup of the shredded cheese;


reserve 1/2 of the cheese.


Cover and bake at 350 degrees for 30 minutes.


Remove and sprinkle top of casserole with reserved cheese.


Return casserole to oven and bake for 15 additional


minutes.


Remove and serve immediately.





Yield 4 to 6 servings








Turkey Chili





Servings: 6





Ingredients:





3 tablespoons vegetable oil, divided


1 1/2 pounds ground turkey


1 (1 ounce) package taco seasoning mix


1 teaspoon ground coriander


1 teaspoon dried oregano


1 teaspoon chili pepper flakes


2 tablespoons tomato paste


1 (14.5 ounce) can beef broth


1 (7 ounce) can salsa


1 (14.5 ounce) can crushed tomatoes,


or coarsely chopped tomatoes packed in puree


1 (7 ounce) can chopped green chile peppers


1 medium onion, finely chopped


1 green bell pepper, diced


3 medium zucchini, halved lengthwise and sliced


1 bunch green onions, chopped


1 cup sour cream


1 cup shredded Cheddar cheese





Directions:





1. Heat 1 tablespoon of oil in a large stock pot over


medium-high heat.


Crumble turkey into the pot, stirring with a wooden spoon


to break apart as much as possible.


Season with taco seasoning mix, coriander, oregano,


chili flakes, and tomato paste, and mix until meat


is evenly coated with seasonings.


Continue cooking, reducing heat if necessary,


until turkey is well browned.





2. Pour in beef broth, and simmer to reduce liquid


slightly, about 5 minutes.


Add salsa, tomatoes, and green chilies, and continue


cooking at a moderate simmer for ten minutes.


Adjust the thickness at any time you feel necessary by


adding water.





3. While chili is still cooking, heat one tablespoon


of oil in a large skillet over medium-high heat.


Cook onion and green bell pepper,


stirring occasionally for 5 minutes,


or until onion is translucent and bell pepper


is lightly browned.


Add onion and bell pepper to the chili,


and continue cooking at a very low simmer.





4. In the same skillet, heat the remaining tablespoon


of oil over medium-high heat.


Add the zucchini, and cook stirring occasionally,


for 5 minutes, or until lightly browned.


Add the zucchini to the chili, reduce heat,


and continue cooking 15 minutes more.


Again, adjust the consistency with water as needed.





5. Ladle chili into serving bowls.


Top with sour cream, green onion, and cheddar cheese,


and serve.








Ground Turkey Casserole





Servings: 8





Ingredients:


1 pound ground turkey


1 (15 ounce) can tomato sauce


1 teaspoon white sugar


1 (8 ounce) container sour cream


1 (8 ounce) package cream cheese


1 (12 ounce) package uncooked egg noodles


2 cups shredded Cheddar cheese





Directions:





1. Preheat oven to 350 degrees F (175 degrees C).





2. In a large skillet over medium-high heat, saute the


ground turkey for 5 to 10 minutes, or until browned.


Drain the turkey, stir in the tomato sauce and sugar, and


set aside.


In a medium bowl, combine the sour cream and cream cheese.


Mix well and set aside.





3. Cook noodles according to package directions.


Place them into a 9x13-inch baking dish, then layer the


turkey mixture over the noodles.


Then layer the sour cream mixture over the turkey,


and top with cheese.





4. Bake at 350 degrees F (175 degrees C) for 20 to 35

Taco Soup

1 lb ground turkey or lean ground beef


1 large onion, chopped


1 (1 ounce) package hidden valley ranch dressing mix


1 (1 ounce) package taco seasoning mix


1 (16 ounce) can pinto beans


1 (16 ounce) can chili beans (hot or regular)


1 (16 ounce) can whole kernel corn


1 (8 ounce) can diced Mexican-style tomatoes

Brown meat and onions and drain.


Mix ranch dressing and taco seasoning into meat.


Without draining, add all of the other ingredients.


Simmer 1 hour.
I LOVE making spaghetti with meat sauce using ground turkey.





1. Thaw turkey


2. Place raw turkey in large skillet with 1 jar of Spaghetti sauce (Newman's Own is good)


3. Break up turkey and mix together with sauce on high heat


4. Mix and cook until turkey all pieces are visibly white, and no longer pink.


5. Add more sauce if sauce is too thick or leave as is


6. Add to spaghetti, penne or preferred type of pasta
The possibilities are endless! just use your favorite ground beef recipes and substitute turkey! I prefer turkey because it keeps the dish lighter and doesn't take over the flavors!

INGREDIENTS


1 pound ground turkey


1/2 cup chopped onion


1 (1.25 ounce) package taco seasoning


1 1/2 cups water


1 1/2 cups sliced zucchini


1 (14.5 ounce) can stewed tomatoes, undrained


1 cup frozen corn


1 1/2 cups uncooked instant rice


1 cup shredded Cheddar cheese


DIRECTIONS


In a skillet, cook turkey and onion until meat is no longer pink; drain if necessary. Stir in taco seasoning, water, zucchini, tomatoes and corn; bring to a boil. Add rice. Reduce heat; cover and simmer for 5 minutes or until rice is tender and liquid is absorbed. Sprinkle with cheese; cover and let stand until the cheese is melted.





This meal is simple. well-rounded, and healthy. Not to mention delicious! Enjoy.

Untidy Samuels





Probably more widely known as Sloppy Joes, these can be made with ground beef or ground turkey. This homemade version is light years ahead of anything you can buy in an envelope or can, and really just as easy. I like to serve these with paper-thin slices of red onion.





Ingredients


1 teaspoon vegetable oil


1 lb. ground beef or ground turkey


1 medium yellow onion, peeled and chopped fine


1/2 cup best-quality ketchup


1/2 cup best-quality chili sauce


2 tablespoons Worcestershire sauce


1 teaspoon coarse salt


freshly cracked black pepper


1/3 cup water


6 sesame seed topped hamburger buns, warmed





Method


Brush a skillet with oil and warm over moderate heat, 30 seconds. Add beef [or turkey] and onion and saut茅 10 minutes, stirring frequently. Add all remaining ingredients [except buns] and simmer, uncovered, 10 minutes. Spoon mixture between split buns and serve immediately.
I love to use turkey in place of hamburger in my spagetti sauce. It gives it a lighter taste. I put about 3/4 tsp. of anis seed in the turkey as I'm browning it and it gives it a wonderful taste! try it.


I also use it half and half with hamburger in my chili.


Meatballs with turkey, gr. beef and gr. veal are good, too.
i use ground turkey all the time, here's a couple recipes that we love...


Ground Turkey Stroganoff


1 1/2 pounds ground turkey 3 slices turkey bacon - diced 1 small onion - chopped,I found the smallest I could and it was still too much onion so I only used half, 2 Tbs. flour 1 10 %26amp; 3/4 oz can low fat/fat free cream of mushroom or cream of potato soup 1/4 teaspoon paprika 2 Tbs. dry red wine


I didn't have any so I used water and it was fine, 1 cup low-fat or fat-free sour cream In a skillet brown ground turkey and bacon until pink disappears. Drain. In crock-pot mix together cooked ground turkey, bacon, onion, flour and paprika. Stir in undiluted soup and wine. Cover and cook on low 4 - 5 hours. Stir in sour cream. Spoon mixture over toast and serve with steamed veggies.





Ground Turkey and Spinach Manicotti


1 box Manicotti


1 poundground turkey


2eggs, slightly beaten


1/2 cup onion, finely chopped


1 clove garlic, minced


1 pound mushrooms, sliced


1 package fresh baby spinach, coarsely chopped


to tastesalt


to taste freshly ground black pepper


1/4 cupParmigiano Reggiano cheese, grated


1-1/2 jars Marinara Sauce





preheat oven to 375. Bring a large pot of water to a boil. cook Manicotti according to package directions; drain and cool.


combine ground turkey, eggs, cheese and vegetables in a large bowl. fill manicotti with meat mixture. Pour of 1/2 jar sauce into 13x9 inch baking dish. Place manicotti in prepared baking dish. Cover with remaining sauce. Sprinkle with remaining cheese.bake covered with aluminum foil for 30 minutes. Remove foil and bake 10 additional minutes.

Kidd's Famous Brown Bag Turkey Recipe





No, this turkey recipe won't burn your house down because you're using a brown paper bag...but it will taste great!





First, take everything out of the inside of the turkey. There will be a giblet bag and some other stuff. You don't want to leave that in there.





Next, add vegetables to the inside of the turkey. This is easy because the veggies are just for flavor...you're going to throw them away later.





You don't even have to peel anything. Take an onion and cut it into quarters. Roughly chop a nice long carrot. Do the same to a couple of stalks of celery. Add several cloves of garlic that you mash between a broad kitchen knife and the counter. Throw it all inside the turkey.





Then rub the turkey all over with olive oil. . . not butter because butter usually has salt in it and that will dry out the turkey. Salt is in the enemy of a moist turkey!





Slide the turkey roaster with the turkey into a large brown paper bag. Staple shut. If you have a huge turkey, use two bags, sliding end of the turkey into one bag and the other end of the turkey into the second bag.. It won't stick to the bird because of the olive oil. Sprinkle with water. Place into pre-heated 350 F oven.





The bag won't burn because paper burns at 451 and we're at 350. If you have an electric oven, be sure to lower the rack so that it doesn't touch the heating elements. The advantage of the brown paper bag over the Reynolds's cooking bag is that the paper breathes so the turkey roasts. In the Reynolds bag the turkey steams, giving it a different taste. Also the brown paper bag retains the same advantage of the plastic cooking bag...no splatters all over the oven.





Roast for 13 minutes per pound.





Remove the nicely roasted turkey to a platter. To make the gravy, strain the pan juices into a really big pot. Any juices that accumulate on the turkey platter get poured into the pot.





Add six oz. of boiling chicken broth and 1/8 cup of corn starch to the gravy to thicken it up. Cook at low heat and stir and cook and stir. If it seems like it isn't going to be thick enough, add a little more corn starch.





You're done!

Ingredients


12-15 pounds turkey 1 1/2 cup Italian dressing


1 stick butter 1 handful Cajun seasonings


peanut oil amount depending on size of turkey garlic powder and onion powder to taste








Directions


Two days prior to cooking:


Defrost turkey. Although not recommended by the FDA, when I have forgotten to take it out early enough, I have successfully thawed it in warm water in the sink--draining and refilling as water turns cool.





Evening prior:


Strain Italian dressing to catch items too big for the injector needle. Melt the stick of butter and add to dressing that has been strained. Take a handful of your favorite Cajun seasonings and add to marinade (I prefer Tony Chachere's (TM) Creole seasoning, Chef Paul Prudhomme's庐 blackened seasoning, Zatarins庐 Creole seasoning, Cajun Shake seasonings, and any Cajun spice I can get my hands on). Add onion powder and garlic powder to taste. You can also purchase Cajun Injector seasoning from the store.





Use injector to inject marinade into the breasts, thighs, and wings. Stick the needle all the way in. As you slowly pull out, slowly press and inject spices into the turkey. Inject from multiple angles for maximum coverage. The more you use the juicer the turkey will be when you cook it. Also, rub seasoning on the outside of the turkey, under the skin, and the inside cavity as well. Place turkey, legs up, on holder and place inside plastic oven roasting bag and set overnight in ice chest with a little ice.


Morning of:


Fill fryer approximately 1/3 with oil, you don't need peanut oil, but once you try it, you won't use anything else). It also smokes less. Dip turkey while in the plastic bag in oil and fill or drain as needed. Oil should just cover the top of turkey. Ensure you have a hole at the top of the plastic bag, otherwise the bag will expand with air and you will not get an accurate reading. Take turkey out of oil and place back in cooler.


An alternative is to use water the previous day prior to seasoning/injecting turkey. Place turkey in a plastic bag and then place in the pot. Pour water into pot until bagged turkey is fully submerged. Remove turkey, mark the water level, empty water, dry and pour oil to that spot.


Heat oil to 375掳-400掳- it takes approximately 30 minutes. Remove turkey from plastic wrap and place in oil. Oil should drop to 350掳. Ensure you keep the temperature between 325掳-350掳, but the closer to 350掳 the better. Cook 2-3 minutes per pound. Never, ever cover pot with lid! You will have much more on your hands than a ';smokin' Cajun turkey';...


You may cook a larger turkey, but most cookers can't handle more than 20 pounds. The largest one I cooked was 21 pounds, but it barely fit in the pot and made cooking the very tip extremely tricky.





Remove and let the turkey rest before carving. According to Emeril, the best way to carve is to PULL the legs, wings and thighs off; then undercut the breast following the bone to the center and then slice.

1/4 cup apple cider


3/4 cup honey


1 bottled beer


1 tablespoon salt

1/2 cup essence or Creole spice


1/4 teaspoon cayenne


pinch of clove

40-60 quart pot with basket, burner and propane tank


candy thermometer to measure heat oil


meat thermometer to test turkey doneness

Directions





1. Season and cure the turkey with salt, pepper and cayenne. Rub seasoning on skin and let sit overnight.





2. In a blender, add all the wet ingredients and then the dry ingredients to make the marinade. Puree on high for 4-6 minutes. Make sure all ingredients are completely pureed and add to an injector.








3. Heat oil to 350 degrees F. Depending on the amount of oil used, this usually takes between 45 minutes and one hour. (To determine the correct amount of oil, place the turkey in the basket and place in the pot. Add water until it reaches 1 to 2 inches above the turkey. Remove the turkey and note the water level, using a ruler to measure the distance from the top of the pot to the surface of the water. Pour out water and dry the pot thoroughly. Be sure to measure for oil before breading or marinating the turkey.)





4. While the oil is heating, prepare the turkey as desired.








5. Once the oil has come to temperature, place the turkey in the basket and slowly lower into the pot. Whole turkeys require approximately 3 minutes per pound to cook. Remove turkey and check internal temperature with meat thermometer. The temperature should reach 170 degrees F in the breast and 180 degrees F in the thigh. Turkey done this way is very versatile, and fun if you do it safely, preferably outdoors, and following all the cautions you read about the oil level in relation to the turkey size. We always make sure that the turkeys we buy are similar in size for ease of cooking. Below are some links you might wish to read about good recipes %26amp; tips. Take whole turkey place in deep fryer fill with water remove turkey.


Mark the water line with a marker.


Spill out water and dry careful not to remove marked line.


Fill with canola oil.


Heat oil to 350 degrees.


In a small pot melt butter and oil and fresh herbs and crushed garlic let simmer 15 minutes.


Strained and set aside.


Save garlic and herbs.


Tie legs and wings with cotton string to keep them in place next to the body.


Place the chopped strained garlic and herbs under the skin of the turkey.


Inject the herbed butter-oil mixture into the breast and legs.


Rub the cajun mixture inside and outside of the turkey.


Place the turkey breast side up in lowering slowly into oil.


CAUTION Of splattering oil.


Fry turkey 3 1/2 minute per pound.


Use a meat thermometer in the thigh and when it reads 180 degrees its done.


Remove from hot oil and drain on paper towels.


Lets rest for 15 to 20 minutes.
Cajun Fried Turkey Recipe





Ingredients


12lb turkey


Chef Williams Cajun Injector Creole Butter Marinade


Chef Prudhomme Magic Seasoning Salt


3 - 4 gallons of oil (preferably peanut oil)





Cooking


Remove giblets from turkey, rinse with warm water, pat dry (especially inside cavity) and leave whole. Drain cavity completely.





Inject 4 oz. of Creole Butter Marinade on each side of breast. Inject 2 oz. in each leg and thigh. Use about 16 oz. of marinade per turkey.





Rub Seasoning Salt on outside of turkey and on the side of cavity.

Hold the turkey by the legs and lower (breast first) slowly (very slowly) into the oil. Make sure all of the water is drained from breast cavity before placing bird into the oil.

    I stuff my turkey with celery,apples, oranges,thyme,and onions i also use wine for basting and put butter under the skin before i cook it and it's always so juicy. oh amd don't forget to oil it down in olive oil and then sea salt,pepper, and rosemary.

    Wow, you have quite the responsibilities this year (again) but so many people have to work Holidays now (it's sickening, I did it for 20+ years) and it stinks! I would hope that your quests could bring a dish, that would be nice. But, if not, keep it simple, here's an easy Turkey breast recipes, do some Mashed Potatoes (but instead of milk, use some sour cream), stuffing (you could use the box kind but add some sausage) , gravy, cranberry sauce (add in some mandarin oranges, raisins or diced apples), a simple salad (you could use spinach instead of the normal salad mix), dinner rolls (or cresent rolls) and some veggies (kids are picky on this one, but if you top them with cheese, they're in!) Carrots with maple syrup and apples are good too, kids love that! I also like doing Breaded Turkey Cutlets, they are simple and easy to cook. I don't wish this task upon any one person, believe me, but remember............you're doing the best you can and cooking for 12 people, all by yourself isn't easy.     INGREDIENTS


    1-1/4 (6 pound) bone-in turkey breast

    This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 10 servings.


    Place the turkey breast in a shallow roasting pan. In a small bowl, combine the remaining ingredients. Spoon over turkey. Bake, uncovered, at 325 degrees F for 1-3/4 to 2-1/2 hours or until a meat thermometer reads 170 degrees F, basting every 30 minutes.

    Shake boneless skinless chicken breast or turkey cutlets in shake n bake (recipe follows, or buy it from the store)


    Mix 1 Pkg. stove top stuffing (6oz) with 1 2/3 C water %26amp; about 1-3 TB butter. Let stand about 5 minutes. (water doesn't have to be boiled, this is to moisten the stuffing, not cook it)


    Spoon over each piece of meat some stuffing. Roll up %26amp; place seam side down on foil lined baking sheet. If there is any stuffing left over from stuffing the chicken, place stuffing over the chicken.





    Toss some veggies (squash, carrots, onion, potaotes, peppers, frozen veggies, etc) in Italian dressing (or whatever you like) Place by the chicken, on foil.





    bake 400 F for 30 minutes.





    Fake Shake N Bake


    3TB whole wheat flour


    1 TB wheat germ (found in cereal isle, or at natural health food stores)


    1/2 C bread crumbs


    2 ts sugar


    1 ts salt


    1 ts italian seasoning


    (may opt. add 1 TB olive oil, but I only have 1x)

    This is the brine i've used evey thanksgiving for the last 6yrs and it as always been a big hit.





    3 gallons water


    2 cups kosher salt


    1 cup sugar


    4 sprigs rosemary


    6 leaves sage or 2 Tbl dried Sage


    1 Tbl black peppercorns


    2 large yellow onion, quartered


    5 cloves garlic


    2 lemons, quartered





    Bring to a simmer, until sugar and salt grains dissolve. Allow to cool completely in refrigerator then then carefully submerge your turkey into it. I usually brine my turkey for anywhere between 36-48hrs, but thats just me. I guess most people usually do it for 24hrs or so, but I find that doing it for 36 hours or more makes it unbelievably juicy and flavorful...........Good brine recipes for my turkey?
    Brine formula


    For a long soak (overnight, or 12 to no more than 14 hours), use 1/2 cup table salt for each gallon of cold water. For a 4- to 6-hour soak, double the amount of salt; that is, 1 cup table salt for each gallon of cold water.


    Time


    Following the long or short soak, whichever works better for you, allow enough time for your bird to soak, drain and ';breathe'; a bit before making it ready for roasting.





    Temperature


    It is essential that the bird be kept at a temperature of less than 40F degrees during the brining process. If you have a container large enough to accommodate your turkey that will fit in your refrigerator (and if there is enough room), the logistics are easy. If refrigerator space is at a premium, however, you may use an ordinary cooler or plastic tub with enough ice packs or sealed bags of ice to keep the temperature low.





    The turkey must be completely submerged in the brine. Most turkeys will require at least 2 gallons of brine, and larger turkeys may need 3 gallons.


    Make sure the salt has dissolved completely before adding the turkey.


    Use a sealed container of water or bag of ice to weigh down the turkey and prevent it from surfacing.


    Rinse the brined turkey inside and out with water, dry with paper towels and prepare according to your usual method.





    You can also use this brine for any other poultry but shorten the brining time for smaller birds.





    Turkey processors ';pre-baste'; birds in an attempt to accomplish the same thing. All manner of ingredients, including turkey broth, salt, oils and artificial flavors and colors, are quickly injected into each turkey, with varying results. For this reason, self-basting turkeys should not be brined. The result will be too salty.





    Kosher salt flaky in texture, less dense than table salt and varies according to which brand you use. Therefore, you must use more of it. For Morton Kosher Salt use 1-1/2 cups for 1 cup of table salt. For Diamond Crystal Kosher Salt, use 2 cups for 1 cup of table salt.
    Russ Parsons, who writes for the L.A Times food section just repeated an article on Dry Brine for Turkey. No water needed, just a salt rub. You can probably do a google search for the recipie. It got better tasting reviews than brining.

    Healthy Turkey Meatloaf





    Ingredients


    3/4 cup quick-cooking oats


    1/2 cup skim milk


    1 medium onion, peeled


    2 pounds ground turkey breast


    1/2 cup chopped red bell pepper


    2 eggs, beaten


    2 teaspoons Worcestershire sauce


    1/4 cup ketchup


    1/2 teaspoon salt


    Freshly ground black pepper


    1 (8-ounce) can tomato sauce


    Directions


    Preheat the oven to 350 degrees F.





    In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.





    Transfer the mixture to a 9 by 13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.

    Porcupine Meatballs with Enchilada Sauce





    1 to 1 1/2 pounds lean ground beef or turkey


    1/2 cup long-grain rice


    1/2 cup finely chopped green bell pepper


    2 tablespoons minced onion


    1/2 teaspoon salt


    1/4 teaspoon ground black pepper


    1 can (approximately 20 ounces) enchilada sauce


    1/4 cup water








    In a medium bowl, combine turkey, rice, bell pepper, onion, salt and black pepper; mix well. Shape into balls about 1 inch in diameter; place in slow cooker. Combine enchilada sauce with the water; pour over the turkey porcupine meatballs. Cover and cook on LOW setting for about 5 1/2 to 6 1/2 hours or until rice is tender. Converted rice (Uncle Ben's) tends to hold up a little better than regular long grain. Check near the end of cooking time to make sure rice does not get mushy. To serve, spoon sauce over meatballs.


    Makes about 2 dozen meatballs.
    One thing to keep in mind is that 98% lean ground beef is often lower in fat than ground turkey (especially if it's not extra lean ground turkey).





    That said ... you can sub ground turkey for just about anything you would make with ground beef. Just add some extra seasoning. Some ideas:





    - Turkey chili with lots of beans (beans are excellent for weight loss and health)


    - Turkey meatloaf with soutwest seasonings, chopped pepers, onions. You can even sneak some thawed chopped spinach in there.


    - Stuffed peppers or cabbage rolls with turkey (use brown rice)


    - Turkey quesadillas. Cook ground turkey with low sodium taco seasonings. Use lots of veggies (peppers, corn, fresh salsa), black bean dip, a little reduced fat cheese. The black bean dip is moist and binds things together so you don't need a lot of cheese. I like Guiltless Gourmet brand


    - Homemade spaghetti sauce with ground turkey.


    - Ground turkey shephards pie. Use thickened low sodium beef broth instead of gravy. Make low fat mashed potatoes for the top. Include peas, carrots, onions, mushrooms.
    We use ground turkey in any recipe that calls for ground beef.

    LEFt over turkey recipes?

    To get rid of most of the left-overs;





    Cut up some left-over turkey, throw into a boiling pan. Add leftover mashed potatos, gravy and stuffing. Add water. Salt and peper. Bring to a boil.





    Add however much of each item you want, if you like turkey more like I do, add extra. If you like stuffing more, add extra. If you want the soup thicker add more mashed potatos. The heat loosens the stuffing and potatos and they get mixed in very well with the soup and adds unique taste.





    It's the perfect hot breakfast, lunch and/or dinner to have the next day, especially when your cold. Very satisfying meal, little time to make (5 minutes prep time, 10 minutes heat time) and it tastes so, so, so, great. One bowl will fill you up but you always want seconds afterwards.LEFt over turkey recipes?

    6 Tbsp butter or margarine


    4 1/2 cups water


    3 cups chopped celery


    1 lg onion chopped


    7 oz (1 jar) pimento-stuffed olives, drained %26amp; sliced

    1. Prepare rice mix with 2 tablespoons of the butter


    or margarine and the 41/2 cups water, following label directions.





    2. Saute celery and onion in remaining butter until

    1 small onion\cooked, chopped


    1 egg


    2/3 cup rolled oats


    1/2 cup plus 3 Tbsps. ketchup


    1 Tbsp. Worcestershire sauce


    1 lb. lean ground beef


    1/2 lb. lean ground pork


    1/2 lb. lean ground veal


    1 cup sweet relish











    Instructions





    Preheat oven to temperature 375掳F. Line a baking sheet with aluminum foil and lightly oil. Combine onion, egg, oats and 8 Tbs. ketchup in a medium bowl. Add Worcestershire and salt and pepper to taste. Stir with a fork until mixed. Add the ground meats and blend well. Line an 8x4 inch loaf pan with plastic wrap. Pack meat mixture into lined pan. Unmold meat mixture onto foil-lined baking sheet. Discard plastic wrap. Bake 45 minutes. Spread remaining ketchup over top of loaf and bake another 15 minutes or until a meat thermometer inserted in center of loaf reads 160掳F. Let stand 5 minutes before slicing. Serve with relish.

Rinse an 8x4 inch loaf pan with cold water. Shake out excess water but do not dry. Pack meat mixture into rinsed pan. Invert and unmold meatloaf onto a lightly oiled baking sheet. Bake about 1 hour or until a meat thermometer inserted into center of loaf reads 160掳F. Let stand 5 minutes. Drain off excess fat into a small bowl. Measure out 2 Tbs. fat and discard the remainder. Cover meatloaf with foil to keep warm. Heat reserved fat in a medium saucepan over medium heat. Sprinkle in flour and cook about 2 minutes, whisking constantly, until flour is lightly browned.     PREPARATION:


    Combine all ingredients except topping in a bowl and combine until blended. A wire potato masher works well for mixing meatloaf. Pack into a loaf pan and bake at 350掳 for about 1 hour and 15 minutes.

    Brown Sugar Meatloaf


    Ingredients


    1/2 cup packed brown sugar


    1/2 cup ketchup


    1 1/2 pounds lean ground beef

    1 small onion, chopped


    1/4 teaspoon ground ginger


    3/4 cup finely crushed saltine cracker crumbs

    DIRECTIONS:


    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.


    Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.


    In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.


    Bake in preheated oven for 1 hour or until juices are clear
    Kicked-Up Meatloaf


    2 tablespoons butter


    1 large onion, chopped


    1 rib celery, finely chopped


    1/2 red bell pepper, finely chopped


    2 teaspoons minced garlic, plus 1 teaspoon


    1 teaspoon chopped thyme leaves


    1 teaspoon chopped rosemary


    1/3 cup chopped fresh parsley


    2 eggs


    1 1/2 teaspoons Dijon mustard


    1/2 cup ketchup, plus 1/4 cup


    2 tablespoons plus 1 teaspoon Worcestershire sauce


    1/2 cup Heavy cream


    2/3 cup Breadcrumbs


    1 pound ground chuck


    1/2 pound pork sausage (such as breakfast sausage)


    1/2 pound ground veal


    1 1/2 teaspoons salt


    2 teaspoons plus 1/4 teaspoon freshly ground black pepper


    4 slices bacon, cut in half


    2 tablespoons white or red wine vinegar


    1/2 cup canned tomatoes, chopped or crushed





    In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.


    Preheat the oven to 350 degrees F.


    When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.


    In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.


    Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving.

    Here's a Vegetarian Fake meatloaf recipe (you meat eaters can use real beef but I'm a vegetarian by choice!) Recipe: Oatmeal, Bran,


    Can pumpkin, Light Soya Sauce and a wee bit water if needed! Optional diced onions sprinkled with tabasco sauce or tacho seasoning!


    Take the can of pumpkin 14 oz size is sufficient


    put in bowl mix other ingredients in bowl putting soya sauce in last. Mixture should form balls if it gets too hard to mix add a wee bit water or a little light soya sauce! For meat loaf


    you don't need to form balls just pat down in a meat loaf pan and sprinkle top with tacho seasoning and cook till lightly golden colour.

    while it's almost cooked! )

    BASIC MIX:





    1 1/2 pounds ground beef


    1 c. fresh Italian style bread crumbs


    1/4 cup fresh parsley, chopped


    3-4 cloves garlic, finely minced


    1 large onion, finely chopped


    1 large green bell pepper, chopped


    1 egg


    1 1/2 teaspoon salt


    1/2 teaspoon garlic powder


    1/2 teaspoon onion powder


    1/4 teaspoon pepper


    1 8 oz can tomato sauce


    1 cup ketchup


    1/2 cup water or beef stock (can use bouillon)


    3 tbsp. Balsamic vinegar


    3 tbsp. brown sugar


    2 tbsp. Dijon mustard


    2 tsp. Worcestershire sauce


    1/4 c. Parmesan, grated (optional)





    In a small bowl, combine tomato sauce, ketchup, Balsamic vinegar, brown sugar, Dijon mustard, Worcestershire sauce, and water/beef stock.





    In a large bowl, combine beef, bread crumbs, onions, green bell pepper, parsley, chopped garlic, egg, seasonings, 3/4 cup of tomato mixture, and optionally, Parmesan cheese.





    Form into loaf. Place into shallow 7 by 10 in. pan or bread loaf tin, lightly oiled. Pour remaining liquid over meat loaf to coat. Bake in a 350 degrees Fahrenheit oven for one hour and 15 minutes, basting occasionally with ketchup or your favorite barbecue sauce.





    Optional Variations:





    Choose one:





    1. Eliminate salt, bouillon, and substitute 3 T onion soup mix. Sprinkle top with tomato soup and crushed crackers instead.





    2. Use old-fashioned rolled oats instead of bread crumbs.





    3. If you have leftover bread, especially Italian or French bread, substitute milk for the water listed in recipe, and soak about 2 cups bread in the milk prior to mixing into the meat mixture. Squeeze out the excess slightly before adding. Substitute this bread for the bread crumbs. After mixing everything together, you can also form this meat mixture into meatballs and fry in 1/2 inch olive oil in a heavy bottom skillet (such as cast iron). If making Italian meatballs, leave out the brown sugar and Dijon mustard, but be sure to use the Parmesan cheese. Season the oil in the pan with 2-3 whole cloves garlic (don't chop it up or it will burn instead of just roasting).





    4. If you're in a hurry, you may use as a substitute 2 cups of barbecue sauce and eliminate the following ingredients: 1 c. ketchup, 1 8 oz can tomato sauce, 3 tbsp. balsamic vinegar, 3 tbsp. of brown sugar, 2 tbsp. Dijon mustard, 2 tsp. Worcestershire sauce.





    5. Eliminate the saut茅 crumbs. Saut茅 this mixture with onion and garlic for 5 minutes and layer a casserole with no-cook lasagna noodles. Place meat mixture to cover noodles. Add a sprinkling of Parmesan cheese and 1/3 pound ricotta mixed with one egg, 1/4 cup freshly chopped Italian parsley or 1 cup fresh spinach and 1/2 pound grated mozzarella cheese. Cover with another layer of noodles, and top with 1 large can of tomato sauce mixed with 1/2 teaspoon each basil and oregano. Place in 325 degree oven 60 minutes or until bubbly, basting occasionally with sauce to prevent lasagna from drying out.





    6. Form meat mixture into large doughnut shapes, approximately 6-7 inches across. When forming the doughnut, don't allow the center to actually become a doughnut hole; just thin it out, leaving a well in the center. Optionally, brush with ketchup. Crush 8-10 Saltine or Ritz crackers into crumbs and sprinkle over the doughnut shaped burger, concentrating the excess crumbs into the center. Sprinkle with onion and garlic powder and a liberal dose of soy sauce, allowing a 1/2 spoon or so to form in the well. This can optionally be topped with cheese and canned mushrooms if desired. Place in microwave and cook on high for 3 minutes or so, according to size, until the juices run clear and meat doughnut is done. Served with meat drippings as topping, there is no need for a bun. This is a fast and easy low-carb lunch!

    2 eggs, beaten

    Preheat oven to 350 degrees F (175 degrees C).


    In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.


    Bake in preheated oven 45 to 60 minutes, until no longer pink.
    My mom always made it with bell peppers %26amp; onions added and I never really like it, my mother-in-law makes the best meatloaf I've ever eaten. So simple!!! 80/20 ground beef (a pound), a sleeve of saltine crackers crushed fine, a small can of tomato sauce, and an egg. Then when it's almost done put ketchup on top...it is wonderful!!!

    1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter


    1 (8 oz bag) Mexican Style Cheddar Cheese, shredded


    1 (4 oz can) Diced Green Chili Peppers


    1 (14-1/2 oz can) Diced Tomatoes, drained


    1 Cup BBQ Sauce (recommended: Kraft Carb Well)





    Instructions:


    Preheat the oven to 350潞F





    In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.





    Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.





    Bake for 45 minutes; drain any residual fat if necessary.





    Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

    VEGAN CHILI RECIPE:





    Ingredients:


    olive oil


    2 large yellow onions, diced


    2 cloves garlic, minced


    1 red pepper, diced fairly large


    1 green pepper, diced fairly large


    2 (28-oz.) cans crushed tomatoes


    1 tablespoon cumin


    1/2 cup ground carrots


    1/2 cup ground celery


    5 mushrooms cut into quarters


    1 package frozen corn


    2 cans black beans (or any other kind of beans you like - chickpeas work well, too)


    1 1/2 cup picante sauce


    1 t. Kitchen Bouquet, browning sauce


    salt to taste


    grated cheddar, if desired


    cashew nuts, if desired





    Directions:





    Saute onions in the olive oil. Add garlic. After onion and garlic are golden brown, add cumin, cayenne, and any other spices. Cook for a few minutes longer.





    Add the diced peppers and saute for a few minutes. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning sauce, and picante sauce into the crock pot; add the onion mixture. Cook on low about 10 hours.





    Serve with grated cheddar and cashew nuts, if desired.

    I read vegetarian times and get great recipes from them. I also substitute a mixture of ground turkey and tofu for any recipe that calls for ground beef. Like in my lasagna and spaghetti sauces. Try it, you won't notice the tofu and you'll get a different protein source.

Remove from oven, drain fat. Pour soup over patties, sprinkle with paprika. Return to oven and bake until bubbly.





    GROUND CHICKEN CASSEROLE





    6 med. potatoes, sliced


    2 med. onions, sliced


    1 1/2 to 2 lb. ground chicken (or other ground meat)


    1 (10 and 1/2 oz.) can cream of chicken soup


    1 (10 and 1/2 oz.) can cream of celery soup


    2 c. water





    Layer first set of ingredients in a baking dish. Cook 1 and 1/2 to 2 lbs. Ground chicken in large skillet until well browned and no trace of pink remains. Layer on top of onions. Mix together remaining ingredients. Spoon over casserole. Bake, covered, in 300 degree oven for 1 hour (or until potatoes are tender).





    EASY GROUND CHICKEN LASAGNE





    1 jar Prego sausage %26amp; green pepper spaghetti sauce


    1 lb. ground chicken


    16 oz. ricotta cheese


    2 1/2 lb. mozzarella cheese


    1 sm. can olives, sliced


    Lasagna noodles (approx. 9)





    Brown chicken then add spaghetti sauce. Heat. Boil lasagne noodles until tender. Begin by layering 9 x 13 inch pan with noodles. Spread ricotta on noodles, enough to cover. Then add some sauce, olives and mozzarella. Continue this layering beginning again with noodles until the pan is full (about 3 layers). Make sure the top has extra cheese. Bake at 350 degrees until cheese is melted and golden.





    GROUND TURKEY ENCHILADAS





    1 1/2 lbs ground turkey


    1 pkg frozen spinach - thawed and drained


    2 cups salsa


    1 can diced tomatoes


    1 pkg flour tortillas


    2 cups Mexican blend cheese


    1 8 oz. block cream cheese


    ground cumin to taste





    Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.


    Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.





    Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.





    Serve with refried beans and mexican rice. Sour cream and guacamole are also great additions.





    GROUND TURKEY CASSEROLE





    1 lb. ground turkey


    1 can tomatoes or tomato sauce


    3 c. cooked macaroni


    12 oz. shredded cheese


    Salt %26amp; pepper to season


    Approx. tbsp. chili powder





    Cook macaroni as usual, drain and set aside. Brown the meat and stir in the tomatoes and seasoning to taste, stir in macaroni and simmer a few minutes, put in a 2 quart casserole dish adding about three fourths of the cheese and mix, bake in 350 degree oven for approximately 45 minutes then take out of oven and add the last of the cheese on top and return to oven for about 5 minutes. Serve hot or cooled it is a very tasty dish.





    GROUND TURKEY VEGETABLE SOUP





    2 lbs. ground turkey or chicken (even hamburger)


    2 lg. onions, 1 diced, 1 sliced


    2 lbs. washed carrots, unpeeled to keep vitamins intact


    6 celery stalks with leaves


    2 lg. cans tomatoes


    1 lg. can tomato sauce


    6 lg. potatoes, washed, but not peeled, cubed


    1 qt. water


    1 qt. beef stock (can be instant or reduce your own)


    Salt and pepper to taste





    Saute chopped onion, ground meat and celery. Strain off any extra fat. Return to stock pot. Add sliced onions, sliced carrots and diced potato. Add tomatoes and tomato sauce. Then add water and stock. Cook all ingredients over medium low heat for about 1 hour. Season to taste with salt and pepper.

Add the broth, lemon zest and juice, tomatoes and juice, and oregano. Bring to a boil, add the olives, reduce heat to low and cover. Allow to simmer on the stove for 45 to 50 minutes until the chicken is very tender. Adjust the seasoning with salt and pepper as desired.     I make sort of a chilli. Cook the meat then add some salsa, beans %26amp; corn. I put hot sauce in but I like hot stuff. You could add peppers too if you like. then I sprinkle some colby jack cheese %26amp; top with sour cream.

    Cook the meat add in diced potatoes. When those are cooked (tender) I add some salsa %26amp; cheese. I serve this with eggs.

    Toss lettuce with 2 tbsp dressing and remaining parmesan cheese. Spoon onto buns. Add done burgers. top each burer with 1 Tbsp of caesar dressing. Serve and enjoy!

    1 medium onion


    1 C. carrots


    1 C. celery


    1 T. vegetable oil


    9 oz. frozen chopped spinach


    3 C. cooked turkey


    1/2 C. country or baked ham


    10 3/4 oz. canned cream of chicken soup


    2 1/2 C. milk, divided


    1/4 t. black pepper


    1 1/2 C. self-rising flour


    1/4 C. Parmesan cheese


    1/2 C. butter or margarine





    Heat oven to 400掳 F. Grease shallow 3-quart baking dish.





    In large skillet, cook chopped onion, thinly sliced carrots and thinly sliced celery in vegetable oil until tender. Stir in spinach (thawed and drained); pour into baking dish. Add shredded or chopped turkey and chopped ham; distribute evenly in baking dish.





    In medium bowl, combine undiluted soup, 1 cup milk and freshly ground pepper; pour over turkey mixture. In medium bowl, combine remaining milk, flour, grated cheese and melted butter or margarine; stir until smooth. Pour over ingredients in baking dish.





    Bake 45-50 minutes or until golden brown.





    Makes 6-8 servings.











    Turkey n' Stuffing Pie





    1 egg, beaten


    1 cup chicken broth


    1/3 cup butter, melted


    5 cups herb-seasoned stuffing cubes





    FILLING:


    1 can mushroom stems and pieces, drained


    1/2 cup chopped onion


    1 tablespoon butter


    1 tablespoon flour


    3 cups cubed cooked turkey


    1 cup frozen peas


    1 tablespoon minced fresh parsley


    1 teaspoon Worcestershire sauce


    1/2 teaspoon dried thyme


    1 jar turkey gravy


    5 slices American cheese, cut into strips





    In large bowl, combine egg, broth and butter. Add stuffing and mix well. Pat onto bottom and up sides of greased 9'; pie plate; set aside.





    In skillet, saute mushroom and onion in butter until tender. Sprinkle with flour and mix well. Add the turkey, peas, parsley, Worcestershire and thyme; mix well. Stir in gravy. Bring to a boil, then boil and stir for 2 minutes.





    Spoon into the crust and bake at 375潞F for 20 minutes. Arrange cheese strips in lattice pattern over filling. Bake 5-10 minutes longer or until cheese is melted.





    Yield: 4-6 servings.

    Turkey barley soup or turkey vegetable soup. Put the carcass of the turkey in a large pot, cover with water or broth. Using broth or a mixture of broth %26amp; water adds flavor! Add some sliced onion %26amp; a couple stalks of celery to add flavor to your stock (remove with carcass). Bring to a boil, turn heat down to simmer for a couple of hours, until meat falls off the bone. Use a colander to strain the broth from the carcass. Let carcass cool enough to handle. Pull meat from bones and add back to soup.





    Add cut up veggies - potatoes, carrots, green beans, diced celery and/or whatever veggies you like. If you want to add rice or barley, cook rice/barley before adding to the soup (it takes up too much liquid), then add to soup. Season to taste.

    My great-grandma always made BBQ with the leftover turkey. Shredded it up in a skillet, pour on some BBQ sauce, and basically heat it up. I like mine with toasted bread, its really good!
    Cut it up in slices and make it in some fettuccini alfredo sauce with spaghetti or





    sherreded it up and add some cut up union lemon and complete seasoning and place in frying pan and that taste awesome too.

    Quick and Easy Leftover Turkey Casserole





    Spray a 13x9 pan with cooking spray. Place 1 1/2 to 2 cups leftover turkey (or chicken) pieces in the bottom. Mix 1 can cream of mushroom soup (or cream of chicken), 1 can cream of celery soup, and 1 cup of milk in a bowl. When mixed, spread soup mixture over the turkey. Take a box-mix of stuffing and sprinkle dry pieces over the soup mixture evenly. Place in an oven at 350 for 30-40 minutes until it's bubbly and beginning to brown.





    Hint: I don't use the stuffing seasoning packet in this or it makes it too salty, I save it as a seasoning for homemade chicken noodle soup later.

    I need a turkey recipe, like a regular turkey and how to cook it.?

    Make sure the turkey is at room temperature before cooking (45 minutes or so) - It will cook much more evenly this way. If you can, invest in a probe thermometer, or at least an instant read one - this will take all the guess work out of when it's truly done. Don't stuff your turkey with bread stuffing, and don't baste it (except for the one time, as directed, to help brown the bird), because every time you open the oven the temperature drops. Both of those things makes the turkey have to cook longer and therefore furthers your chances of the bird drying out! Make sure to let the turkey rest before carving too - very, very important!





    Roast Turkey





    1 (8 to 10 pound) turkey, neck and gizzards removed


    Kosher salt and freshly ground black pepper


    1 medium onion, quartered


    1 head garlic, halved


    Several sprigs fresh herbs, such as, thyme, parsley, rosemary, or sage


    2 bay leaves


    8 tablespoons unsalted butter (1 stick), melted





    Adjust a rack to lowest position and remove other racks. Preheat oven to 325 degrees F. Dry bird well with paper towels, inside and out. Salt and pepper inside the breast cavity and stuff the onion, garlic, herbs, and bay leaves inside. Set the bird on a roasting rack in a roasting pan; breast side up and brush generously with 1/2 the butter and season again with salt and pepper. Tent the bird with foil.





    Roast the turkey for 2 hours. Remove the foil and baste with the remaining butter and some of the pan drippings. Increase oven temperature to 425 degrees F and continue to roast until an instant read thermometer registers 165 in the thigh of the bird, about 45 minutes more. Remove turkey form the oven and set aside to rest for 20 minutes before carving. Carve and serve.

    Perfect Roast Turkey





    1 fresh turkey (12 pounds)


    Kosher salt


    Freshly ground black pepper


    1 large bunch of fresh thyme


    1 lemon, halved


    3 Spanish onions


    1 head garlic, halved crosswise


    4 tablespoons butter (1/2 stick), melted


    1/2 cup good olive oil


    8 carrots, peeled and cut into 2-inch chunks


    10 red new potatoes, halved


    3 heads fennel, fronds removed, cut into wedges through the core





    Preheat the oven to 350 degrees.





    Take the giblets out of the turkey and wash the turkey inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the turkey in a large roasting pan. Liberally salt and pepper the inside of the turkey cavity. Stuff the cavity with the thyme, lemon, one of the onions (quartered), and the garlic. Brush the outside of the turkey with the butter and sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey. Peel and slice the remaining onions, toss them with 1/4 cup olive oil, and scatter them around the turkey.





    Roast the turkey for 1 hour. Toss the carrots, potatoes, and fennel with 1/4 cup olive oil and add to the roasting pan. Continue to roast for about 1 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 20 minutes.





    Stir the vegetables and return the pan to the oven. Continue to cook the vegetables while the turkey rests. Slice the turkey and serve on a platter with the roasted vegetables. Serves 8.

    Saute chopped apples and walnuts in tuns of brown sugar stuff the turkey with that then but it on a bed of chopped apples then drizzle the access liquefied brown sugar then pour much more brown sugar over it
    The best way to cook a turkey I think is to use a Reynolds Oven Bag (turkey size). They come out so moist and tender. Just stuff the turkey and season it, then place it in the bag. The bags come with a chart telling you how long to cook it according to your size of turkey. It also has recipes on how to fix the turkey.
    Just stick it in the oven with some veges
    chop up some onions and bellpeppers and stuff them in the turkey. Add salt and pepper to turkey and stick in the oven for the appropriate time. Remember, keep it covered with aluminum foil until the last 20 minutes to make the top crispy.





    When you pull out the turkey, dump out the juice into a medium size pot. Empty the cooked onion and bellpepper mix into the pot as well. Cut up some of the breast and add it to the mix along with enough water to just cover the meat. Put the pot on the stove and put it on medium/low heat. Simmer the mix on the stove until it thickens into a gravy. Cook about 4 cups of rice and keep warm on the side.





    When all is ready , put a big scoop of rice into your plate, and cover your rice with a spoonful of turkey meat gravy. Salt to taste and enjoy!

    Thaw remove the bag with the neck etc. Wash pat dry. Get a couple of tablespoon mayonnaise in a bowl. Add Kosher salt, sage,poultry seasoning and pepper mix set aside. Take one onion quartered and several pieces of celery. Leave the leaves on the celery for more flavor. Stuff all of this into the cavity. Get a pastry brush a apply your mayonnaise mixture over the entire bird. This keeps in the juices better than anything I have ever tried. Place a thermometer in the side of the bird do not touch a bone. Bake on 325 until the thermometer reaches the exact temperature for poultry. It is very important that you remove from over at that exact time. Enjoy





    Side note: I sometimes inject the bird with marinade for a different flavor.
    The best turkey I have ever had has been done in a brown paper sack. (like the ones you bring your groceries home in)


    all you do is oil down the bird. Place the bird in a brown paper bag and tie the end with i twist tie or string. (mark where the popper is, if it has one) Bake according to the directions. This turkey wil come out golden brown and be so juicy. Pour out the juices from the turkey and use them for the gravey.

    Thanksgiving Butternut Squash Soup





    1 1/2 cups Butternut Squash, diced


    1 cup Skim Milk


    3/4 cup Cauliflower florets, torn into pieces


    3 cloves garlic, cut in half


    1 stalk Celery, chopped


    1-2 slices Onion, chopped


    1/2 lb. Turkey Breast, torn into pieces or cut into cubes


    Ground Ginger to taste


    Salt to taste





    -Heat squash, milk, and garlic in a saucepan, covered, on low until squash is tender (or until milk is steaming, if using leftover squash). Transfer into blender, blend until texture is smooth. Return to saucepan. Add cauliflower, celery, onion, turkey breast, ginger and salt and cover. Simmer on low, stirring occasionally, until celery is tender.





    Serves 2.





    PS: Measurements might not be exact. I don't get out a measuring cup for the cauliflower or squash; I'm just estimating how much I use.What recipes work for left over turkey?
    Nice and easy! Take the turkey and shred it.Take your shredded turkey and put in the leftover gravy.Put this after heating onto your heated up leftover mashed potato.

    I love turkey pot pie's but I use rolled out pillsberry crescent roll dough for the crust, and use mashed potatoes to top it (like a shepards pie)

    Your gonna laugh. I'm not sure why we call it this but, mom calls it **** on a Shingle.





    You make gravy and mix your turkey in it. then make mashed potatoes and lay them out on your plate. get a piece of TOAST and cut it in half where the points are up. then poor gravy on it. its a one dish meal and its quick and great.
    My mom made different types of turkey pie and we loved it.

    Ingredients


    1 ready to bake refrigerated pie crust


    2 cups chopped cooked turkey


    1 sm onion, diced


    1 TBSP sage


    3 TBSP flour


    4 TBSP butter


    2 cups chicken broth





    Directions


    Preheat oven to 450 degrees


    Saute onions, with sage in 1 TBSP of the butter until softened


    Add turkey to mixture and put into pie plate


    In same pan, melt remaining butter while stirring in flour - it will make a gritty paste


    Stir in broth slowly to make a thick sauce.


    Pour over turkey mixture


    Top with crust and brush top with milk


    Bake until top is golden brown - about 20 minutes - and serve

    LEFTOVER TURKEY %26amp; MUSHROOM CASSROLE


    Combine leftover chopped turkey, with 1 can condensed cream of mushroom soup, 1/2 cup chopped onion, 1 can mixed drained mixed veggies, 1 small package of fast-cooking rice and 2 1/2 cups of chicken broth. Bake it at 350 degrees in a casserole dish until the rice is tender and the liquid is absorbed.

    Put it in turkey gravy, add a drained can of chop suey veggies, heat, and serve over rice.





    Mix with salsa, roll up in tortillas, and bake with cheese.

    the one i use depends on which stuffing my kiddos vote for....


    although the last recipe is really not a stuffing..... it is a dressing..

    Wild Rice Stuffing


    Ingredients..


    2 cups hot water


    4 cubes chicken bouillon, crumbled


    1 (6 ounce) package wild rice, uncooked


    1/2 cup butter


    1 cup chopped celery


    1/2 cup chopped green bell pepper


    1 (5.5 ounce) package seasoned croutons


    2 teaspoons poultry seasoning


    Directions....


    Dissolve 3 cubes bouillon in 1 cup hot water. In a medium saucepan, combine wild rice with bouillon water, then fill with just enough cold water to cover. Bring to a boil. Reduce heat, cover, and simmer 25 minutes, stirring occasionally.


    Mix remaining 1 cube bouillon in 1 cup hot water. Heat butter in a medium skillet over medium heat. Stir in celery and green pepper; cook until tender. Mix in remaining bouillon water. Pour skillet contents into a large bowl. Stir together cooked rice, croutons, and poultry seasoning.


    Stuff turkey loosely, and cook turkey as directed. Or put stuffing into a well greased baking dish, cover, and bake 30 minutes in a preheated oven at 325 degrees F (165 degree C).








    Three Stuffing


    Ingredients..........


    1 1/2 cups cubed whole wheat bread


    3 3/4 cups cubed white bread


    1 pound ground turkey sausage


    1 cup chopped onion


    3/4 cup chopped celery


    2 1/2 teaspoons dried sage


    1 1/2 teaspoons dried rosemary


    1/2 teaspoon dried thyme


    1 Golden Delicious apple, cored and chopped


    3/4 cup dried cranberries


    1/3 cup minced fresh parsley


    1 cooked turkey liver, finely chopped


    3/4 cup turkey stock


    4 tablespoons unsalted butter, melted


    Directions....


    Preheat oven to 350 degree F (175 degree C). Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl.


    In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.


    Pour sausage mixture over bread in bowl. Mix in chopped apples, dried cranberries, parsley, and liver. Drizzle with turkey stock and melted butter, and mix lightly. Spoon into turkey to loosely fill.





    Oyster Dressing


    Ingredients.....


    2 (8 ounce) packages corn bread mix


    3 tablespoons butter


    1/2 cup chopped onions


    1/2 cup diced celery


    2 (8 ounce) cans oysters, liquid reserved


    2 eggs


    1/2 teaspoon ground black pepper


    1 tablespoon poultry seasoning


    1 1/2 teaspoons dried sage


    1 (14.5 ounce) can chicken broth


    Directions....


    Prepare the corn bread according to package directions. Allow bread to cool, then crumble into a large bowl.


    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch baking pan.


    Over medium-low heat melt butter in a large saucepan. Mix in the onions and parsley. Cook slowly, stirring occasionally until onions are soft. Transfer to the bowl with bread crumbs.


    Chop the oysters. Mix oysters, eggs, pepper, poultry seasoning, sage, chicken broth and reserved oyster liquid into the corn bread mixture. Transfer to the baking dish.


    Bake uncovered in the preheated oven 45 minutes.

    Apricot, Almond and Orange Stuffing


    Ingredients


    40g butter


    1 large brown onion, finely chopped


    150g ham, roughly chopped


    6 cups fresh white breadcrumbs


    1 orange, finely grated rind and 1/3 cup juice


    200g large dried apricots, roughly chopped


    1⁄2 cup almonds, roughly chopped


    1 1⁄2 teaspoons ground cinnamon


    2 eggs, beaten


    Salt and freshly ground black pepper





    Instructions


    Melt butter in a large non stick frying pan over medium heat.


    Add onion and ham.


    Cook for 3 minutes or until onion is soft.


    Remove from heat and cool.


    Combine onion mixture, breadcrumbs, orange rind, orange juice, dried apricots, almonds, cinnamon, eggs, salt and pepper in a large bowl.


    Use as stuffing for turkey or bake separately in a loaf pan lined with baking paper at 175ºC (350ºF) for 35 minutes.


    This quantity of stuffing is enough to fill a Size 32 (3.2kg -7lb) turkey.
