Southwestern Turkey Casserole


Yields: 8 servings








INGREDIENTS:





1 (10.75 ounce) can


condensed cream of chicken


soup


1 (10.75 ounce) can


condensed cream of


mushroom soup


1 (7 ounce) can diced green


chili peppers, drained


1 cup sour cream


16 (6 inch) corn tortillas, cut


into strips


10 ounces cooked turkey,


diced


8 ounces shredded Cheddar


cheese








DIRECTIONS:





1. Preheat oven to 350 degrees F (175 degrees C).


2. In a mixing bowl, combine the chicken soup, mushroom soup, chili peppers and sour cream.


3. Line the bottom of a 9x13 inch baking pan with corn tortillas. Follow with a layer of turkey. Pour soup mixture over turkey, sprinkle with 1/2 of the cheese. Repeat layers and top with cheddar cheese. Bake for 30 to 45 minutes or until cheese is browned and bubbly.What can i do with leftover turkey.easy recipes please.?
Turkey-Green Chile Enchiladas


Leftover turkey? Mix it with cheese, chiles and cumin for delicious hot and spicy enchiladas.

Makes:8 servings





Sauce


2 tablespoons vegetable oil


1 large onion, finely chopped (1 cup)


2 cloves garlic, finely chopped


1 cup chicken broth


2 tablespoons semisweet chocolate chips


1 tablespoon ground ancho chiles


1 teaspoon ground cumin


1/2 teaspoon salt


1 can (28 oz) Muir Glen庐 organic fire roasted crushed tomatoes, undrained


Enchiladas


2 cups shredded cooked turkey


1 cup sour cream


1 1/2 cups shredded Cheddar cheese (6 oz)


2 cans (4.5 oz each) Old El Paso庐 chopped green chiles, undrained


1 package (11.5 oz) Old El Paso庐 flour tortillas (8-inch; 8 tortillas)


1 cup shredded pepper Jack cheese (4 oz)





1. Heat oven to 350掳F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.





2. In 12-inch skillet, heat oil over medium-high heat. Add onion and garlic; cook about 1 minute, stirring frequently, until onion is tender. Stir in remaining sauce ingredients. Heat to boiling. Reduce heat to low; cook uncovered 15 minutes, stirring occasionally.





3. In medium bowl, mix all enchilada ingredients except tortillas and pepper Jack cheese. Spread about 1/2 cup turkey mixture over each tortilla; top with 2 tablespoons sauce. Roll up tortillas; arrange seam sides down in baking dish. Pour remaining sauce over tortillas. Top with pepper Jack cheese.





4. Spray sheet of foil with cooking spray; place sprayed side down over baking dish. Bake 30 to 45 minutes or until thoroughly heated.
Turkey Hash.


CORNED BEEF HASH


Put through a food chopper, equal parts of cold cooked corned beef and cold potatoes with a medium onion. Moisten with a little bouillon or cream if it seems dry. Heat in buttered skillet, if desired, make indentation for eggs. Cover pan until eggs are cooked.


To bake hash, place in greased baking pan with an egg on top of each serving, if desired. Bake at 375 degrees for 15 minutes.





For crispy hash, shape hash into serving size patties. Coat top and bottom with seasoned flour (paprika, salt and pepper). Brown in hot oil or butter in skillet. Make an indentation for poached egg if desired.





Substitute Turkey for the Corned beef.
Mmmm make a hot turkey/bacon sandwich with melted cheese.

Cover with potatoes and bake at 350 for 25 minutes or until browned.
That is easy. Make soup! Get some chicken broth or buillion cubes, add your turkey, potatoes and veggies. You can add just about any veggie you like carrots, onion, corn, celery, tomatoes, etc. Add salt, pepper, and any spices you may enjoy, garlic powder is good too. You could omit the potatoes and serve over the rice of your choice. Serve with french bread and a salad. Yum.
Turkey Tetrazzini is great! Or just chop it up and freeze it for when you would like to make something on a busy night. You can make soup with it (do you still have the turkey carcass??), make a casserole, turkey tacos, the sky's the limit.

Yield: 6 servings


2 Onions; sliced


2 tb Vegetable oil;


4 c Turkey / chicken; -cooked chopped


1/4 c Whole wheat flour;


2 c Chicken stock or broth;


2 c Carrots; sliced, steamed


2 c Tomato/canned peeled diced;


1/2 ts Dried thyme;


1/2 ts Dried rosemary;


6 Potatoes; cooked, mashed





In a large saucepan, saute the onions in the oil for 5 minutes. Add the turkey (or chicken). Sprinkle in the flour, stir to blend. Add the chicken stock, carrots, tomatoes, thyme, and rosemary. Cook over medium heat until thickened. Pour into a lightly oiled 3-quart casserole. Spread the potatoes over the top. Bake in a 375 F oven for 20 to 30 minutes, or until browned.

Shred up the turkey. Make your own gravy or get a season gravy mix and mix the turkey and gravy together and serve over potatoes. Can do a hot turkey sandwich and add the bread also.
