Ground Turkey Casserole





4-6 servings 40 min 20 min prep





3 cups uncooked wide egg noodles


1/2 lb ground turkey


1 medium chopped onion


1 cup chopped broccoli


1 (15 ounce) can tomato sauce


1 teaspoon italian seasoning


2/3 cup nonfat dry milk powder


1/2 cup water


4 ounces cubed cream cheese


1 tablespoon minced fresh parsley


1 minced garlic clove


1 1/2 cups shredded part-skim mozzarella cheese





Cook Noodles.


Steam broccoli until just tender 2-3 mins.


In large skillet, cook turkey%26amp; onion over medium heat; drain.


Mix in tomato sauce%26amp; Italian seasoning.


Bring to boil.


Reduce heat, cover%26amp; simmer for approx 10 mins.


In a separate saucepan, combine milk powder, water, cream cheese cubes, parsley%26amp; garlic.


Cook%26amp; stir over med heat until cream cheese is melted.


Drain Noodles, add to cream cheese mixture.


Put into an 8-in sq baking dish coated w/ nonstick cooking spray.


Mix broccoli into Turkey mixture and top noodles.


Sprinkle with mozzarella cheese.

I make my own turkey burgers, which were a big hit and everyone liked them. If I told you the recipe I would have to shoot you after.

We make turkey meatballs with chopped spinach in them.





Put the ground turkey in a bowl, along with fresh chopped spinach (thawed frozen spinach works too). Add about a cup of italian spiced breadcrumbs and a whipped egg. Mix with your hands, roll into balls. Then cook them up till theyre nice %26amp; brown, roll in parmesan cheese, and serve with some pasta %26amp; a salad. It's a pretty good meal.

Brown the ground turkey make sure it's fine not in big lumps then in another pan saute 1 and half cups of cabbage and a small onion, take a cupcake pan and put store bought croissants in the lightly greased cups with the 2pointed edges sticking out. spicy turkey burgers








Ingredients


1 1/4 pounds lean ground turkey





1 cup mild salsa, divided





1/2 cup finely chopped shallots





1/4 cup chopped fresh cilantro





4 tablespoons vegetable oil, divided





1 tablespoon chipotle-flavored hot sauce





1 teaspoon ground cumin





1 teaspoon salt





1/2 teaspoon ground black pepper





4 crusty rolls, halved horizontally, toasted if desired





4 lettuce leaves





Preparation





Mix ground turkey, 1/2 cup salsa, shallots, cilantro, 3 tablespoons oil, hot sauce, cumin, salt, and pepper in large bowl. Shape turkey mixture into four 3 1/2- to 4-inch-diameter patties.


Heat 1 tablespoon oil in large nonstick skillet over medium-high heat. Add burgers; cook until brown, about 3 minutes per side. Reduce heat to low. Saut茅 until burgers are cooked through, about 4 minutes, turning occasionally.





Arrange roll bottoms on 4 plates. Place lettuce, then burgers on roll bottoms. Top each burger with 2 tablespoons of remaining salsa, then roll tops.

Ingredients


2 tablespoons vegetable oil





1/2 cup minced onion





1 1/2 tablespoons minced garlic





4 teaspoons ground cumin





1 pound uncooked turkey breast slices, cut into 1/2-inch cubes





1/2 pound ground turkey





3 cups (or more) chicken stock or canned low-salt broth





1/4 cup pearl barley





2 tablespoons chopped seeded jalape帽o chilies





1 teaspoon dried marjoram





1 teaspoon dried summer savory





1 15- to 16-ounce can cannellini (white kidney beans) or Great Northern beans, rinsed, drained





1 15- to 16-can garbanzo beans (chickpeas), rinsed, drained





Several dashes of hot pepper sauce (such as Tabasco)





Chopped green onions





Grated cheddar cheese





Sour cream





Preparation





Heat vegetable oil in heavy large saucepan over medium heat. Add onion and garlic and saut茅 until tender, about 5 minutes. Add cumin and stir until fragrant, about 30 seconds. Add cubed turkey breast and ground turkey. Saut茅 until no longer pink, about 4 minutes.


Add 3 cups stock, barley, jalape帽os, marjoram and summer savory to turkey mixture. Cover and simmer until barley is almost tender, stirring occasionally, about 40 minutes.





Add cannellini and garbanzo beans to chili. Simmer uncovered until barley is tender and chili is thick, about 15 minutes. Season with hot pepper sauce, salt and pepper. (Can be made 1 day ahead. Cover and chill.Bring to simmer before serving.)





Serve chili, passing green onions, cheese and sour cream separately.





goat cheese-stuffed turkey burgers with roasted red pepper relish





Ingredients1 1/2 pounds lean ground turkey





6 tablespoons fresh breadcrumbs





3 tablespoons fresh lemon juice





2 teaspoons grated lemon peel





2 teaspoons dried thyme





1 1/8 teaspoon salt





1/2 teaspoon ground black pepper





6 tablespoons soft fresh goat cheese (such as Montrachet)





6 whole wheat, hamburger buns








3 tablespoons olive oil





4 7-ounce jars roasted sweet red peppers, rinsed, drained, patted dry, chopped





1 1/2 cups chopped onions





3 teaspoons finely chopped garlic








4 1/2 tablespoons cider vinegar


3 tablespoons sugar





1/4 teaspoon dry mustard





1/4 teaspoon cayenne pepper





Preparation





For Burgers:





Combine turkey, breadcrumbs, lemon juice, lemon peel, thyme, salt and pepper in large bowl. Mix well. Divide turkey mixture into 6 equal portions. Form 1 portion into two 4-inch diameter patties. Place 1 tablespoon goat cheese atop 1 turkey patty; place second patty atop cheese. Seal patties at edges to enclose cheese. Repeat with remaining 5 portions. (Can be prepared 4 hours ahead. Cover and refrigerate.)


Prepare barbecue (medium-high heat). Grill burgers until cooked through, about 5 minutes per side. Grill hamburger buns, cut side down, until lightly toasted, about 1 minute. Place turkey burgers on bottom half of buns. Top burgers with Roasted Red Pepper Relish, then bun tops and serve.





For Relish:





Heat oil in heavy large skillet over medium-high heat. Add red peppers and saut茅 2 minutes. Add onions and garlic. Cook until onions are tender, stirring frequently, about 5 minutes.





Mix vinegar and sugar in small bowl until sugar dissolves. Stir vinegar mixture into red peppers. Mix in mustard and cayenne pepper. Season with salt. Continue cooking relish until all liquid has evaporated, stirring frequently, about 6 minutes. Cool to room temperature. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.)








asian turkey lettuce wraps





1 tablespoon peanut oil





1 large onion, chopped





1 1/4 pounds lean ground turkey








1/2 cup purchased Asian peanut sauce





1 tablespoon hoisin sauce





1 tablespoon soy sauce, plus additional soy sauce for dipping





1 cucumber, peeled, seeded, chopped (about 1 1/4 cups)





1/3 cup coarsely chopped fresh mint plus





1/3 cup small mint sprigs





12 large butter lettuce leaves





Preparation





Heat peanut oil in heavy large skillet over medium-high heat. Add onion and saut茅 until beginning to brown, about 3 minutes. Add turkey and saut茅 until brown and cooked through, breaking up with back of spoon, about 7 minutes. Add peanut sauce, hoisin sauce, and 1 tablespoon soy sauce; heat through. (Can be made 8 hours ahead. Cover and refrigerate. Reheat in microwave or skillet, adding water by tablespoonfuls to moisten if necessary, before continuing.) Stir in cucumber and chopped mint. Season with salt and pepper.


Transfer turkey mixture to medium bowl. Place mint sprigs and lettuce leaves on platter. To make wraps, spoon turkey mixture onto lettuce leaf, add a few mint sprigs, fold in sides over filling, and roll up. Pass additional soy sauce alongside wraps for dipping.








penne with turkey and wild mushrooms





Ingredients





1 pound penne





4 tablespoons olive oil





1 red bell pepper, chopped





1 tablespoon chopped fresh thyme or 1 1/2 teaspoons dried





2 large garlic cloves, chopped





1 teaspoon dried crushed red pepper





1 1/4 pounds ground turkey





1 pound assorted fresh wild mushrooms (such as crimini; stemmed shiitake; portobello, dark gills scraped away), sliced


5 green onions, chopped





1 1/3 cups canned low-salt chicken broth 2





1/2 cups grated Parmesan cheese 1/2 cup dry white wine





Preparation





Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally to prevent sticking. Drain very well. Set pasta aside.


Heat 2 tablespoons olive oil in heavy large pot over medium-high heat. Add bell pepper, thyme, garlic and crushed red pepper; saut茅 2 minutes. Add ground turkey to pot. Saut茅 turkey until cooked through, breaking up turkey with back of fork, about 5 minutes. Using slotted spoon, transfer turkey mixture to large bowl.





Heat remaining 2 tablespoons oil in same pot over medium-high heat. Add mushrooms and green onions and saut鈥?until mushrooms are tender and brown, about 6 minutes. Add turkey mixture, broth, 1 1/2 cups Parmesan cheese, wine and pasta. Cook until sauce thickens enough to coat pasta, tossing often, about 3 minutes. Season to taste with salt and pepper. Serve, passing remaining Parmesan cheese separately

yup..they are right...anything just like your making in ground beef..try this one..vietnamese spring rolls..mix the ground turkey with 2gloves chopped garlic,1tbsp fish sauce,2-3pcs chopped shiitake mushrooms,washed glass noodles,salt and pepper to taste..roll into spring rolls wrapper and dee fry til golden brown.then eat them rolling in lettuce and cucumber and deep in fish sauce,sugar and water mixture..oh yummy!
