Recipes for left over turkey?

I roasted a turkey yesterday (no, I am not confused about Thanksgiving). I'd like some recipes for leftover turkey. I would love to have something besides the same old left over turkey dishes (you know the type that Mom made that seemed to last for ever).

Turkey-Mushroom Soup





4 c sliced mushrooms


1/2 c chopped onion


1/2 c sliced carrots


1/2 c sliced celery


2 ea cloves garlic, minced


2 T margarine


2 T all-purpose flour


1/4 t salt


1/8 t dried whole thyme


1/8 t dried whole marjoram


1/2 c skim milk


1 T dry sherry


1 ea egg yolk, lightly beaten


10 oz chicken broth


1 c cubed, cooked turkey


1/3 c cooked regular rice


1 T diced pimento





Combine mushrooms, onion, celery, carrots, garlic and margarine


in a 2-quart casserole; microwave, uncovered at high for 6 to


7 minutes, stirring after 3 minutes. Add flour, salt, thyme; stir well. Add milk and next three ingredients,


stirring well.





Microwave, uncovered at high 6 to 9 minutes or until slightly


thickened, stirring every 2 minutes.

Turkey Alfredo Casserole








6 oz fettucini noodles


1/8 t pepper


10 oz frozen cut broccoli


1 1/2 c skim milk


1 T margarine


2 1/2 c chopped cooked turkey


3 T flour


1/2 t dried basil, crushed


3/4 c grated Parmesan cheese


1/4 t salt





Cook pasta, drain and set aside. Run water over broccoli to thaw.


In a large saucepan melt margarine or butter. Stir in flour, basil,


salt and pepper. Add milk all at once. Cook and stir until


thickened and bubbly. Cook and stir for 1 minute more. Stir in


turkey or chicken, 1/2 cup of the cheese and broccoli. Remove


from heat.





Add pasta and toss to coat. Turn turkey mixture into a greased


12 by 7 1/2 by 2 inch baking dish. Cover with foil. Bake in a


350 degree oven for 20 minutes. Remove foil. Sprinkle with the


remaining cheese.

same as above only forget the noodles and add dried cranberries and chopped pecans and stuff it into pastry shells.
use it to make chili instead of beef. It is absolutely delicious
A great thing I do with leftover turkey is freeze it. I freeze it chopped up-2 cups worth in a cool whip container and then I can pull it out whenever I need it.

飩? cup sour cream

Lightly grease a shallow casserole dish. Spread crushed chips on bottom. Mix together all other ingredients except cheese. Pour over chips. Sprinkle cheese on top. Cover and bake at 350 for 30 minutes. Uncover and bake another 10-15 minutes.





*Turkey Pot Pie

飩? can cream of chicken soup


飩?6 oz pkg frozen vegetables for soup


飩? cups diced cooked chicken or turkey


飩?cup milk


飩?tsp thyme


飩?tsp pepper


飩? prepared 9 inch pie crust





Put frozen vegetables in large bowl and microwave on high for 10 minutes. Add soups, chicken, milk, and spices and mix well. Line pie pan with pie crust. Add filling and top with remaining pie crust. Bake at 350 for 1 hour. Cool 10 minutes before cutting.

飩? lasagna noodles


飩? cups cooked cubed turkey


飩? carrots (shredded)


飩? stalks broccoli (cut in small flowerettes)


飩? cups shredded cheddar cheese





Heat soup, milk and salt %26amp; pepper until smooth and bubbly. Cook lasagna noodles until limp but not soggy. Cook carrots and broccoli in microwave on high for about 4 minutes or until just tender. Layer sauce/noodles/turkey/vegetables/cheese. Repeat. Top with remaining 3 noodles and sauce. Bake at 350 for 1 hour. Let stand 10 minutes before serving.








Sorry- I realize that these all have a ';can of soup'; involved....
Chop up a small onion, some celery, and a couple of boiled eggs. Take some of the roasted turkey and chop it up. Add all of the ingredients and add some mayonnaise. You now have Turkey salad. You can serve it on a bed of lettuce, on bread or on crackers. Enjoy, it is good.
This is what I make; with EXTRA Mushrooms and Cooking Sherry...





TURKEY TETRAZZINI:


2 cups cooked turkey, diced


1/4 cup margarine or butter


1/4 lb to 1/2 lb. fresh mushrooms, sliced


1/4 cup flour


2 cups chicken broth


2 Tablespoons dry Cooking Sherry


1 cup evaporated milk


salt and pepper to taste


8 ounces cooked spaghetti, drained


1/2 cup parmesan cheese, grated


Melt margarine, add mushrooms and cook 5 minutes. Stir in flour. Add chicken broth, sherry and milk. Stir and cook until mixture boils and thickens. Season to taste. Remove from heat.


In 2-quart buttered casserole, put alternate layers of spaghetti, turkey, and mushroom sauce; finishing with spaghetti. Sprinkle top with grated Parmesan cheese. Bake at 400 degrees for 20 to 25-minutes or until bubbly.
Turkey Supreme





Here's an easy sauce for leftover turkey. Serve over noodles or rice. You can add pimiento or cooked peas or carrots to the sauce for more flavor and color.


INGREDIENTS:


1/4 cup butter


1/4 cup flour


1 cup hot chicken broth


1/2 teaspoon salt


dash pepper


1 cup half-and-half


sliced turkey breast, about 12 to 16 ounces


cooked rice or noodles


1 to 2 tablespoons chopped toasted* almonds


PREPARATION:


Melt butter in a saucepan over low heat; add flour, stirring until smooth. Pour hot chicken broth into the flour mixture and stir until smooth. Add salt and pepper. Heat half-and-half in a separate saucepan or in microwave, then add to the thickened sauce.


Cook over low heat for 10 minutes, stirring constantly. Serve sauce hot over sliced turkey breast and rice or noodles. Sprinkle with toasted chopped almonds if desired.


Serves 4.


*To toast nuts, spread out in a single layer on a baking sheet. Toast in a 350掳 oven, stirring occasionally, for 10 to 15 minutes. Or, toast in an ungreased skillet over medium heat, stirring, until golden brown and aromatic.








Leftover Turkey and Stuffing Casserole





This tasty turkey casserole recipe is made with leftover turkey, leftover stuffing and gravy, and a little cranberry sauce for topping.


INGREDIENTS:


4 cups prepared turkey stuffing


2 cups cooked cut up or sliced turkey


1 3/4 to 2 cups prepared turkey gravy


1/3 cup jellied or whole cranberry sauce, cubed


PREPARATION:


Butter bottom and sides of 2-quart baking dish. Arrange half of the stuffing in bottom of dish. Add half of the turkey then half of the gravy. Repeat layers. Top with cubes of cranberry sauce. Bake at 350掳 for 30 minutes.


Serves 4.
I've made in the past:





Turkey noodle soup (make it with chicken stock) and add the veggies you like.





I love Nicoise salads, and I've added turkey over the salad and it was just YUMMY!





If you have kids, you can make sandwiches - of course.





Also in pasta salads. Shred the turkey a little and toss it with fun pasta with legumes, black olives and some italian salad dressing.





If you have tons of meat left, you can always make a sheperd's pie.

turkey pot pie, BBQ turkey, as in BBQ pulled pork but do it with turkey on low in a slow cooker, turkey and dumplings, really anythign with chicken in it can be replaced with turkey, i woudl say turkey burgers but you need raw turkey for that
Well, we always made fresh stuffing and added strips of turkey to it and baked in the oven with a layer of cheese on top and gravy on the side. I can't think of anything but the generic leftover recipes. Once the turkey has been baked and basted in it's own juices, it's honestly not going to change in taste and only dry out with each new cooking. I guess Turkey Pot Pie was invented for just that reason.
