Here's a great one that I make all the time.
Homemade Turkey Pot Pie
1 package frozen deep dish pie crusts (I like Marie Callendars)
2 cups cooked turkey, cut into 陆 cubes
3 boiling potatoes, peeled
3 carrots, peeled
1 onion, peeled
1 can cream of chicken soup
陆 cup milk
2 tsp dried basil
Salt and pepper to taste
录 cup flour for rolling dough
录 stick melted butter (optional)
Remove the frozen pie crust from packaging. There will be two separate pie crusts. Set one aside and carefully remove the other one from the pie tin. Place the crust upside down on a piece of wax paper and let thaw. Don鈥檛 worry if it cracks or a piece of the edging breaks off.
Quarter the potatoes and onions, slice the carrots in 1/2 inch pieces, and place in water in a saucepan. Boil together until the vegetables are cooked but not falling apart. Drain and let cool enough to handle. While vegetables are cooling off, use the same pot they cooked in and mix the cream of chicken soup with the milk and the basil, salt and pepper to taste. Whisk until smooth on low heat so it warms but it not bubbling.
Set oven to 400 degrees F.
Chop the vegetables into 陆 cubes. Put the cubed turkey and vegetables into the soup mixture, gently combining until all the turkey and vegetables are coated with the soup mixture. Turn off the heat.
With a fork, prick the pie crust still in the pie tin along the inside edge and bottom. Sprinkle flour on a cutting board; form the thawed pie crust on the wax paper into a ball with as little kneading as possible. Roll out on the flour into a circle large enough to cover the other pie crust with 2 inches to spare on all sides.
Scoop the turkey and vegetable mix into the tin with the pie crust. If you have leftover soup, do not pour it in. With your hands, press the turkey filling gently into the pie crust until it is firm and smooth. Place the rolled out pie crust on top of the pie gently. Using a knife, cut away the excess pie crust around the edge. Use a fork to press the two pie crust edges together, and trim away excess.
Slice a vent opening or two in the top crust, place on a cookie sheet, and bake until the crust is browned, approximately 30 minutes. During the last 5 minutes, brush the crust with melted butter if desired.
If you have enough excess dough left over, you can roll it out and form small crispy rounds to serve with dinner.

Easiest ';homemade'; Chicken (Or Turkey) Pot Pie Ever!:

4-6 servings 1 deep-dish pie
2 ready-made pie crusts (I prefer Pillsbury)
4 skinless chicken breasts, cut into bite-sized pieces
1 onion, chopped
2 tablespoons margarine
1 (14 ounce) can corn
1 (14 ounce) can green beans
4 potatoes
3 (10 1/2 ounce) cans gravy (I like to use 1 each of chicken, turkey %26amp; beef, but you can play with this one.)
poultry seasoning
garlic salt
salt %26amp; pepper
2 tablespoons worcestershire sauce
Preheat oven to 400 degrees and take pie crusts out of the fridge to allow to warm up a bit.
Saute the chicken in a large, deep skillet with the chopped onion and 2 TB margarine until chicken is no longer pink. Season with 3 dashes poultry seasoning, salt, pepper and 2 dashes garlic salt. While chicken is cooking, peel and chop potatoes. Place potatoes in a microwave-safe bowl with a little bit of water, cover and microwave for 8 minutes.
When chicken is done, add cans of gravy and worcestershire sauce. Gravy should ';bite'; just a little bit from the worcestershire sauce, as the flavors will mellow out while baking (worcestershire sauce may have to be adjusted depending on which brand of gravy you use.)
Add veggies to chicken mixture.
Unroll one crust and place in the bottom of a 2-quart oven-proof dish. Pour chicken mixture on top, and cover with other crust. Seal %26amp; crimp crust and cut for venting.
Bake at 400 degrees until top is browned, about 20 minutes.
