I'm not sure what you mean by Southern, but I grew up in the South and here's how my mom taught me to do it: Stuff the cavity with 2 or 3 tablespoons of margarine, a coarsely chopped onion, 2 or 3 chopped carrots and celery leaves. Rub the bird all over (after you've washed it and patted it dry) with olive or cooking oil or margarine. Put it on a rack in the roasting pan, cover it with a cheesecloth soaked in cooking oil. Tuck the cheesecloth in around the bird, but be sure it's entirely covered. Start it out in a 450o oven, turning it down to 325o as soon as you put the bird in. Baste often with chicken broth after the first 25 minutes or so, at least every 20 minutes; cook about 15 minutes per pound, or whatever the processor suggests on the packaging. Use a meat thermometer to monitor doneness; you should go for 185o in the thigh meat.
southern?... Hmm I grew up in Texas and we usually just baked the turkey in an oven bag to keep it moist, or sent it to some friend of my Dads that had a smoking house and he smoked it for us (mmmm!) We usually had a pot roast along with it and a baked ham for those that liked ham (I am not a ham eater) and with this.. came candied yams (sweet potatoes with brown sugar and marshmallows toasted on top) green beans, plenty of mashed potatoes with giblet gravy, salads of all sorts, cranberry relish (I hated as a kid) baked beans, coleslaw, cornbread, baked dinner rolls, pecan pie, pumpkin pie, apple pie, chocolate cake, and tons of iced tea and lemon aide..
