Good recipes using turkey or chicken?

We've recently started our family on a limited red meat and low fat/low carb diet to combat my daughter's pre-diabetic condition and high triglyceride levels. We're getting a little worn out with grilled or baked chicken and turkey, turkey chili and chicken spaghetti... Anyone have any yummy recipes they could share that use white meat, boneless/skinless cuts of chicken and turkey, and/or ground chicken and turkey? Thanks!Good recipes using turkey or chicken?

There more things that you can do with chicken than you can count. Here is one simple recipe for chicken:





Spicy Chicken %26amp; Rice





* 2 tablespoons extra-virgin olive oil


* 4 large chicken thighs with skin and bones (about 2 pounds)


* Ground cloves


* 1 1/2 cups diced seeded red bell peppers


* 1 cup chopped onion


* 1/3 cup golden raisins


* 1/3 cup coarsely chopped pitted imported green olives


* 4 small bay leaves


* 2 garlic cloves, peeled


* 1 teaspoon hot chili paste (such as sambal oelek) or 1 small serrano chile, chopped


* 1 1/2 cups jasmine rice or long-grain white rice (9 to 10 ounces), rinsed, drained


* 2 to 2 1/2 cups low-salt chicken broth





Heat oil in large skillet over medium-high heat. Sprinkle chicken generously with salt and pepper, then lightly with ground cloves. Add chicken to skillet and saut茅 until brown, about 5 minutes per side. Transfer chicken to plate.





Pour off all but 4 tablespoons fat from skillet. Add bell peppers, onion, raisins, olives, bay leaves, garlic, and chili paste to skillet. Saut茅 until vegetables begin to soften, about 2 minutes. Add rice; stir 1 minute. Press chicken into rice. Add 2 cups broth; bring to boil. Cover, reduce heat to medium-low, and simmer until chicken is cooked through and rice is tender, adding more broth if dry, about 20 minutes.
Chicken %26amp; Broccoli Alfredo





Ingredients:





1/2 of a 1-pound package linguine


1 cup fresh or frozen broccoli flowerets


2 tbsp. butter


1 lb. skinless, boneless chicken breast, cut into 1 1/2-inch pieces


1 can Cream of Mushroom Soup


1/2 cup milk


1/2 cup grated Parmesan cheese


1/4 tsp. ground black pepper





Directions:





Prepare the linguine according to the package directions in a 3-quart saucepan. Add the broccoli during the last 4 minutes of cooking. Drain the linguine mixture well in a colander.





Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook until it's well browned, stirring often.





Stir the soup, milk, cheese, black pepper and linguine mixture in the skillet. Cook until the mixture is hot and bubbling, stirring occasionally. Serve with additional Parmesan cheese.

Cheesy Chicken %26amp; Rice Casserole





Ingredients:





1 can Condensed Cream of Chicken Soup


1 1/3 cups water


3/4 cup uncooked regular long-grain white rice


1/2 tsp. onion powder


1/4 tsp. ground black pepper


2 cups frozen mixed vegetables


4 skinless, boneless chicken breasts halves


1/2 cup shredded Cheddar cheese





Directions:





Heat the oven to 375掳F. Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish.





Top with the chicken. Season the chicken as desired. Cover the baking dish.





Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Stir the rice before serving.

Quick Chicken Parm





Ingredients:





4 skinless, boneless chicken breasts


2 cups Prego庐 Traditional Italian Sauce *


1/2 cup shredded mozzarella cheese


2 tbsp. grated Parmesan cheese


4 cups hot cooked spaghetti





Directions:





Place chicken in 2-qt. shallow baking dish. Top with pasta sauce. Sprinkle with mozzarella cheese and Parmesan cheese.





Bake at 400掳F. for 25 min. or until done. Serve with spaghetti.

Creamy Chicken And Vegetables





Ingredients:





Vegetable cooking spray


4 skinless, boneless chicken breasts halves


1 can Cream of Mushroom Soup


1/2 cup milk


1 tbsp. lemon juice


1/4 tsp. dried basil leaves, crushed


1/8 tsp. garlic powder


1 bag (16 ounces) frozen vegetable combination (broccoli, cauliflower, carrots)





Directions:





Spray a 12-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and cook until it's well browned on both sides. Remove the chicken and set aside.





Heat the soup, milk, lemon juice, basil, garlic powder and vegetables to a boil in the skillet. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through.
I lb. chicken breasts, cut into strips


1 pkg. 8oz cream cheese..can be light or omitted if need be, and you can use more chicken.


1 can 41/2 oz green chilies


1 pkg. flour tortilllas 6 in. size


2 cans green chili enchilada sauce 10 oz


3/4 cup of shredded cheddar cheese





Heat oven to 400 degrees, spray a 9';x13'; glass baking dish with cooking spray.


In a 10 '; nonstick skillet, cook chicken until no longer pink inside. Stir in cream cheese and chilies, reduce heat and cook and stir until blended and cheese is melted.


Spoon the chicken mixture into 12 tortillias roll up and place seam side down in baking dish. Pour sauce over top and sprinkle with cheese. Bake 15 to 20 mins. or until hot and cheese is melted.


I warm up the tortillas to make them easier to roll.
