Not sure if these items are common in your pantry, but this is what I do with leftover turkey:

My Very Own Pot Pie:

Open up a a few cans of cream of chicken or mushroom soup, more or less depending on the amount of ';pie'; you want to make. Place in a pot undiluted and heat to almost boiling and add some cheddar cheese in the soup. I normally use a small amount of sharp, or a little more medium, depending on what I have in the fridge. Add a little cheese at a time--as the cheese melts it will flavor the soup...and you won't even taste the cheese. It makes for a wonderful flavor!

I then add whatever vegetables I have in the kitchen, whether it's fresh, canned, or frozen. For quickness sake, if the veggies are fresh or frozen, I prepare them while the soup is heating. When the veggies are ready, or the canned veggies are opened, add them to the soup mixture to form the main substance of the ';pie.'; Use any veggies you like, and as much as you like. You can use a frozen bag of veggie blend, or whatever. I usually use canned english peas, corn and carrots.

While you're mixing everything above, I have puff pastry shells heating in the oven. As soon as they're ready, I take them out of the oven, place one shell on a plate, remove the top and fill the shell with the filling you made earlier. For aesthetic purposes, I allow some of the filling to pour out of the top and down one of the sides, and then place the top back on, sort of half-****** on top of the filling.

I know it's not a traditional recipe, but it's a great way to use what you have, rather than buying everything you need at once.

Turkey sandwiches.
This sounds odd but if you boil the meat off the bone and then put the meat in a food prosier machine you can season the meat and make turkey burgers or turkey meat loaf.

IT IS REALLY GOOD, GOOD LUCK!!!!
shred leftover meat, add can of cream of chicken soup (or cream of mushroom) and a little milk to thin out a bit. Serve over cooked egg noodles or open faced buns.

If you prefer a casserole, add turkey, soup and milk to cooked elbow or egg noodles, put in casserole dish and heat in oven until bubbling. Top with shredded cheese and heat until cheese is melted. MMMMMM!!!

It doesn't get any easier, tastier or cheaper than this!
epicurious.com is a pretty good website
Good and very easy. Take about a tablespoon of Chinese mustard, add a teaspoon of soy sauce, a teaspoon of sugar and blend well. Take your turkey an break it up into bite sized bits. Mix with shredded lettuce and mix with the mustard sauce.
