Turkey with Dijon sauce.
For the sauce, you basically make a white sauce, add a couple of tablespoons of Dijon and some thyme to taste.

2/3 cup Louisiana Hot Sauce
Juice of one lemon
1 tablespoon soy sauce
Mix last three ingredients. Put turkey filets in to a large zipper baggie and pour the hot sauce mixture over it. Marinade for an hour or two. Grill.Does anyone know of any good recipes using turkey breast filets?
2 skinless, boneless turkey breast halves
1 small onion, quartered
1 tablespoon butter
2 cups sliced fresh mushrooms
1 package (10 ounces) frozen chopped spinach, cooked and drained, or
2 cups chopped cooked fresh spinach
1/4 teaspoon nutmeg
1/4 teaspoon salt
freshly ground pepper
4 teaspoons grated Parmesan cheese
In a medium size saucepan, combine turkey breasts and onion with water to cover. Cover and poach turkey over medium low heat until just white throughout, about 20 minutes.
Meanwhile, melt butter in a large frying pan. Add mushrooms and cook until tender, about 5 minutes.
Preheat broiler. Place spinach in an 8 inch square baking dish (one that can take the broiler). Sprinkle with nutmeg, salt, and pepper to taste. Arrange turkey in a single layer over spinach. Top with mushrooms. Sprinkle with cheese. Broil for 1 to 2 minutes,until cheese is melted.
I use
1 cut and cubed onion
2 stalks of celery
1 cup of bread crumbs
1 egg
Salt and Pepper for seasoning.
Take 1 tsp of oil. Heat it up in a frying pan. Add the cubed onions, and cut celery. Brown until tender for about 5 minutes. Add the turkey breasts and brown them in the onion/celery mix. for about 5 minutes or until done. mix the eggs with a fork, add the bread crumbs to it, add salt and pepper . Pour over the Turkey breast. Let brown until bread crumbs are lightly brown. Set it on low flame. Yum!
roll them up with spinach and cheese then secure it with a toothpick and either bread and fry turkey or leave plain and sautee in olive oil
