Mix some cranberries in the stuffing with finely sliced red onion ....mmm very nice ! Anything fruity to take the dry taste out of your mouth. Add water to the bottom of the cooking tray and that will steam the turkey aswell as roasting. And it makes a lovely xmas gravy ...Good luckDoes anyone have some good turkey stuffing recipes?

i usually use this to stuff my turkey with...
5/6 slices of Stael bread,
1 onion chopped..
a decent sprinkle of dried/ fresh sage...
1 beaten egg...
and some chopped bacon ...
mix all together and stuff your turkey with it.
or it tastes great baked on its own for 20 Min's in the oven
The turkey liver (if not available chicken liver). suet or butter, sausage meat, chestnuts (de-frosted frozen variety) salt and pepper, Proven莽al or Italian mix dried herbs. Use a mixer to combine the ingredients. Stuff the turkey, you can also stuff the neck end.

would put a simple sage and onion stuffing in the turkey but I always cook a separate stuffing in an ovenproof dish, such as Pyrex. One of those 8 inch ones about 2 inches deep. In this I cook my own recipe sausage stuffing as follows.
Ingredients
1 lb / 500gms good quality sausage-meat
1 slice of semi stale bread made into breadcrumbs using a food processor.
1 medium, onion sliced then cut into very small pieces, 1/4 in square
1/2 teaspoon paprika
1/2 teaspoon dried mixed herbs
1/2 teaspoon dried sage
teaspoon Worcestershire sauce
teaspoon dark soy sauce
1/2 teaspoon paprika
dash of salt and black pepper
Basically all you need to do is mix all the ingredients thoroughly in a bowl until they are well combined.
Place in the ovenproof dish and sprinkle with a little more paprika. Bake in an oven at 180 deg C for about half an hour. Halfway through lift out with ovengloves and pour away and excess fat. Do this also after cooking. Serve hot with turkey. Guests can cut chunks out and eat it like a meat with the turkey. Delicious.
Take a fresh sage plant and use a good half of the leaves which you should wash and roughly chop into a baking tray or mixing bowl, add finely chopped onion and a loaf of good (but stale)wholemeal bread which has been whizzed roughly in a food processor.
Mix all ingreidents together well and coagulate the mixture with a good glug of extra virgin olive oil. You can stuff this raw mixture into the uncooked bird or bake it flat on a baking tray and serve as toasty sqaures. If you opt for the latter then a good boxing day breakfast is a poached or fried egg served on such a square. The left over squares can be frozen if you have too many and used as a base for finger food.
This is how sage and onion stuffing should always taste! Add salt and pepper as desired.
For extra kick and a little twist, add a few chilli seeds, to serve with spicey dishes.
Lemon juice added in, to serve with fish courses works well. If you do not like sage, try rosemary or coriander instead. The possiblities for variation are only as endless as your imagination with this recipe and the basic ingredients are always vegetarian!
Mixture of canned peaches or apricots mashed juice kept to baste with, a hand ful of fresh bread crumbs, pine nuts or chopped finely almonds, chopped shallots( bunch)and either philly cheese, ricotta or fetta, with an egg all mixed together and chooped cooked drained spinach, its scrumptious,
a pinch of favourite herbs and a sprinkle or tiny piece of ginger.
All mixed together , to your own choice consistancy.
Don,t forget to baste with the juice from canned fruit.

This one is easy and very good. Made in the microwave and then put in the turkey.
8 oz.fresh mushrooms,sliced
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup margarine
1 egg
1 pkg. (8 oz.) seasoned stuffing mix (about 4 cups)
1 cup hot water
2 teas. instant chicken bouillion
1 teas. sage
Combine mushrooms,onion,celery and margarine in 1 1/2 quart
casserole dish. Microwave on high until vegetables are tender.
5 to 8 minutes. Stir in remaining ingredients. Microwave on high 4 to 7 minutes, stirring once during cooking. Stuff into the bird.
brown some jimmy dean sage sausage, remove to plate, in same pot saute diced onion and celery in butter until soft. add sausage and torn bread add chicken broth to get the consistancy you want. Put in baking dish cover with foil and bake for last 1/2 hour of turkey.
BASIC BREAD STUFFING (yummy !)
- 2 loaves of bread, torn into small pieces
- chicken broth to moisten (or water with bouillion)
(for vegetarian stuffing, use vegetable bouillion, milk or cream)
- finely chopped onions, garlic, parsley, celery (carrots if desired)
- butter or margarine
- poultry seasoning to taste
(sage, rosemary, thyme -- lots of thyme!)
Mix until moist. Can be heated in the microwave, or put in a casserole dish in the oven until crispy on top. (Putting inside the turkey may cause bacteria growth, so most people no longer do that).

garlic crushed
peppers (all green, red, yellow, orange)
olive oil/ vegetable oil
salt
seasoning (chicken)
fresh coriander/ parsley
Method:-
take oil in a pan. when hot add the onion and saute till light brown.
now add the crushed garlic and peppers and saute for 3-5 mins on medium heat.
add salt and seasoning to it.
now cook it for five mins adding some water to make a paste.
add fresh coriander/ parsley to the paste and keep it aside to cool.
this can be use to stuff the turkey.
Another simple stuffing is garlic butter with fresh chives.

Many years ago I asked the same question of an old farmer in
Norfolk,here is his answer.
';youm need two bits of string and a key like';
';tie the beak shut and the legs togethar, don't forget to lock the door afore ye start';
Follow directions on the back of any stuffing recipie and add RAISINS. Gives it a nice sweet twist.
