I always just roast it, i know boring but this year i was wondering if there is any special recipes or tips for making the old turkey a little more special if you know what i mean???? Happy christmasAny great recipes for cooking a turkey???
Perfect Turkey
A perfectly seasoned and juicy turkey.
INGREDIENTS
1 (18 pound) whole turkey, neck and giblets removed
2 cups kosher salt
1/2 cup butter, melted
2 large onions, peeled and chopped
4 carrots, peeled and chopped
4 stalks celery, chopped
2 sprigs fresh thyme
1 bay leaf
1 cup dry white wine
DIRECTIONS
Rub the turkey inside and out with the kosher salt. Place the bird in a large stock pot, and cover with cold water. Place in the refrigerator, and allow the turkey to soak in the salt and water mixture 12 hours, or overnight.
Preheat oven to 350 degrees F (175 degrees C). Thoroughly rinse the turkey, and discard the brine mixture.
Brush the turkey with 1/2 the melted butter. Place breast side down on a roasting rack in a shallow roasting pan. Stuff the turkey cavity with 1 onion, 1/2 the carrots, 1/2 the celery, 1 sprig of thyme, and the bay leaf. Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the white wine.
Roast uncovered 3 1/2 to 4 hours in the preheated oven, until the internal temperature of the thigh reaches 180 degrees F (85 degrees C). Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with the remaining butter. Allow the bird to stand about 30 minutes before carving.

TURKEY ENCHILADAS WITH OLIVES -
Serves: 4
3 tbsp butter or margarine
2 cups fresh mushrooms, sliced
1/2 cup onion, chopped
3 cups cooked turkey, chopped
1 can cream of chicken soup, undiluted
1 cup sour cream
1/2 cup pimento-stuffed olives
1/2 cup toasted almond slivers
2 tsp chili powder
8 corn tortillas
oil
1/2 cup cheddar cheese, grated
Melt butter in a large saucepan. Add mushrooms and
onion; saute' until onion is tender. Remove from heat and
stir in turkey, undiluted soup, sour cream, olives, almonds
and chili powder.
Briefly cook tortillas in hot oil until softened; drain
on paper towels.
Place 1/3 Cup turkey mixture in center of each tortilla.
Bring opposite sides of each tortilla up over turkey
mixture overlapping edges at center. Arrange, seamside
down, on a greased 9x13 and a 8x8 baking dish. Spoon
remaining turkey mixture down center of each enchilada.
Sprinkle cheese on top.
Bake @ 400~ for 25 minutes until hot. May take longer
depending on oven.

my dad has recently used fresh herbs all over the turkey and puts it into the cavity of the turkey, he uses rosemary, tyme, and some other things, also he uses celeary and carrots under the turkey to prop it up so the bottom does not get over done or burnt. he also used one of those glade oven bags, it was so moist, good luck with the turkey
The Perfect Christmas Turkey Recipe
INGREDIENTS:
6.3kg turkey
6 tbsp vegetable oil
125g butter
1 lemon, halved
1 pack fresh rosemary
salt and freshly ground pepper
PREPARATION:
1. Preheat oven to 220C/425F/gas mark 7. Remove the giblets from the turkey. Rub oil on the outside of the bird and season well.
2. Place the butter, lemon and whole herbs in the cavity. Cook the bird breast-side down for 15 minutes, then turn the oven down to 180C/350F/gas mark 4. Cook for 3 1/2 hours, turning bird the right side up after 2 hours.
3. Test the turkey with a skewer in the leg joint. If blood comes out, give it another 20 minutes. If clear juices run out, it's cooked. Remove from the pan, wrap in foil and rest for 20 minutes while you make your gravy.

yep an oven on 200 normally works a treat
The best tip I can give you on cooking turkey is to cook it upside down in a tent of foil, that way the juices run into the breast so you don't get dry meat. Turn it the right way round without foil for the last half hour of cooking to crisp the skin up. Always leave the turkey to rest in a warm place for about 45 mins before carving (great time to have the starter).
Marinate it or inject it. We personally always fry ours.
If I do roast. I coat it the night before in a little Canola oil and rub in it then liberally coat with Tony Cachere's seasoning. Roast slowly, breast down and when nearly done, turn over to brown the breast. I put veggies inside like celery and onions
Stuff it with Chestnut and Cranberry stuffing (or bake this separately if you prefer)
Baste the skin with melted butter
Sprinkle a little salt and pepper on it then put a few rashers of smokey backon on top (or pancetta)
Then be prepared for the adoration.
I've been cooking turkey out the wazoo. Turkey and Dumplings, Turkey Chili and Turkey Tortilla Soup were all quite yummy. I figure if a recipe is good enough for chicken it's good enough for turkey.
Turkey Dumplings The Easy Way
1 lbs turkey shredded
2 cans Chicken broth
1 Can Cream of Celery
1 cup Celery Cut into chunks
Salt, Pepper, Sage To Taste
1 can biscuits
Throw everything but the biscuits into pot bring to boil over med heat. Reduce to simmer. Pinch peices of biscuits and throw into pot. Cover and let simmer (20 min) or so. Enjoy
